Brew Day - December 26, 2009

3 Dog Stout Today is just an extra brew because I have a craving for a stout. I have on hand some black malt that needs to be used up. 14 lbs. Canada Malting 2-row 6 lbs. Flaked Barley 2 lbs. Carafa Special De-husked III 2 lbs. Roasted Barley 60 grams Northern Brewer hops ( 60 min ) 25 grams Northern Brewer hops ( 30 min ) 40 grams Nottingham yeast O.G. - 1.045 F.G. - 1.012 % - 4 SRM - 44.6 BU - 40.2 This has a lot of roast character to it. I saved one keg for the summer months. It may mellow out by then. I like a good roasted character in my stouts and I may go with more Carafa malt and less roasted barley. I have lots of time to figure that out. Today is April 16. I thought I would sample a bit to see how it is doing after so many months. This has really mellowed out since last winter. It had back then a rough, harsh roasty taste to it. Now, that is not a bad thing. I personally like that in a stout. I don't like that famous brand from Ireland because it is too wimpy. 3 Dog Lager This is a change from my regular brew recipes. I have been thinking of brewing all lagers for awhile now. If this turns out okay, I may switch to lagers in the spring. I still have lots of ale yeast and Chinook hops in the freezer, so it will be awhile. I won't abandon CPA's because it is my favourite style. 15 Gallons 23 lbs. Canada Malting 2-row 2.35 lbs. Vienna Malt 73 grams Hallertauer hops ( 4.5 AA ) 60 minutes 43.4 grams Hallertauer hops ( 4.5 AA ) 30 minutes 50 grams Mauribrew Lager Yeast O.G. - 1.050 F.G. - 1.012 % - 5 SRM - 3.8 bu - 24.8 It took 24 hours to see any activity. Using a conical, I can only go by the blow-off hose. I did have trouble with the lid seal, so it may of been fermenting earlier. Still, as a lager the activity is subdued compared to my usual ale fermentations.

3 Dog Canadian Amber Ale I am still trying to get this Canadian Amber Ale down. Too much Chinook in previous tries, so I lowered the MH addition. I may up the 1 minute addition to 56 grams on the next try of this style of beer which is my favourite. 15 gallons 23 lbs. Canada Malting 2-row 1 lb. Crystal Malt ( 70L ) 1 lb. Flaked Barley 28 grams Chinook ( 11.5% ) MH 14 grams Chinook ( 11.5% ) 60 min. 14 grams Chinook ( 11.5% ) 40 min. 14 grams Chinook ( 11.5% ) 20 min. 28 grams Chinook ( 11.5% ) 1 min. 40 grams Nottingham O.G. - 1.046 F.G. - 1.012 % - 4.47 SRM -6.3 BU - 41.3 It is done fermenting now, ( Dec. 13 ). I will crash cool it for a few days to let some yeast settle. I have to remove the yeast prior to this, because if I don't it won't come out of the valve. 1/2" port is too small for all that cooled yeast. Krabby Patty Pub Ale This is a light beer for our annual Christmas get together. I should of brewed this last month because I don't have time to brew another brew in case this goes south. 14 Gallons 25 lbs. G & P 2 row 1 lb. Crystal ( 75L ) 1 lb. Flaked Barley 60 grams EKG ( 5% AA ) mash hopped 40 grams Nottingham O.G. - 1.052 F.G. - 1.014 % - 5 SRM - 6.8 BU - 18.4 This is a nice, smooth light ale. The Christmas visitors should like it. I need more hops though. Just a little bit more to make it interesting.

3 Dog Harvest Ale This is a Canadian Amber Ale. I brewed this a while back and it was really good until I did something at kegging time. It went south quickly. I still don't know what happened. The brew was really good up to then, so I am giving it another go. 15 Gallons 27.50 lbs. G & P 2 row 1 lb. Flaked Barley 1 lb. Crystal ( 75L ) 28 grams Chinook 11.4% AA ( mash hopped ) 10 grams Chinook ( 60 min ) - 11.4% 10 grams Chinook ( 20 min ) - 11.4% 28 grams Chinook ( 1 min ) - 11.4% 40 grams Nottingham O.G. - 1.062 F.G. - 1.014 % - 6.3 SRM - 6.6 BU - 30 I mashed higher than usual ( 77C ) to get more of a malt taste that was lacking before. I know that the Notty yeast will chew through it to get a final gravity of around 14. It is pretty well done a week later. The hop bitterness is low. This is a beer for Christmas and visitors, but I like a hoppy beer. This will be okay for guests. Quite low on the bittering part, but lots of aroma and that is exactly why I brewed this beer. I ...

That Dark Stuff This is a recipe I put together from specialty grains that needed to be used up. I should of used more special B in this recipe. Next time. 15 Gallons 25 lbs. G & P 2-row 1 lb. Crystal ( 75L ) 1 lb. Flaked Barley 8 ozs. Weyermans Carafa III 4 ozs. Dingemans Special B 70 grams EKG Mash Hopped 28 grams EKG ( 30 min ) 28 grams EKG ( 1 min ) 40 grams Nottingham O.G. - 1.060 F.G. - 1.010 % - 6.6 SRM - 14.8 BU - 26.3 This beer is okay, but I didn't use enough of the dark grains. It has a hint of special B, but not enough of what I was looking for. I will double the B malt if I ever brew this again.

3 Dog IPA This is another hoppy Canadian IPA. All Chinook hops. Pretty bitter, at least the sample was from the conical when I dropped some yeast out. I use dry yeast, so I drop it to get clear beer when I keg. I crash cooled it a few days ago and it should be ready to keg by October 28. 15 Gallons 27.50 lbs. Canada Malting 2-row 2 lbs. Flaked Barley 1 lb. Bairds Crystal ( 75 L ) 1 lb. Corn Sugar 86 grams Chinook ( 11.4% AA ) 60 minutes 56 grams Chinook ( 11.4% AA ) 10 minutes 56 grams Chinook ( 11.4% AA ) 0 minutes 40 grams Nottingham O.G. - 1.062 F.G. - 1.010 % - 6.8 SRM - 6.7 BU - 68 It is around 4-5C now and that is as cold as the fridge will get 14 gallons of beer. Even then, the fridge is on a lot. It is an old fridge and I hope it lasts awhile. If crash cooling doesn't do much to clear the beer, I'll just unplug it for the winter. I may even have to move it to my beer room where there is a wall heater. Hopefully, that won't happen until Jan - Feb gets here. Burrr.......

3 Dog IPA I bought Jamil's book ( Brewing Classic Styles ) a couple of years ago and this recipe is based on his American IPA. I used all Chinook because it would of cost way too much to ship these different hops bought on-line. How is $13.00 shipping for 4 ounces of hops? Crazy. I bought 5 lbs. of Chinook from a place in Toronto and the shipping was $8.00. Figure that one out. Anyway, the smell of Chinook hops was fantastic in my garage. I used around 250 grams of hops. The hopstopper had a thick layer of hops on it. It did it's job. 14 Gallons 27.50 lbs. of Canada Malting 2 lbs. Flaked Barley 1 lb. 15 Gallons 3 Dog Blonde This is a single malt brew using only Canada Malting 2-row. I want to brew a simple beer to see what it will taste like with no crystal, biscuit or any adjuncts in it. I read on the net that a lot of homebrewers are having great success with this style. I am having issues with quality lately and I bought some new yeast ( Nottingham ). If something is not right, this style of beer will certainly show it because there really is nothing to hide. I am fermenting this at around 14C - 15C. Quite cool for an ale yeast, but within range of the Nottingham yeast according to Danstar. 14 Gallons 3 Dog Pub Ale This is my easy drinking pub ale which I have brewed in the past with great success. I am using a different yeast now. I am now using Mauribrew Ale 514. This is a lazy yeast, takes longer to ferment and clear though. I used all the malt I had in the bag this time. 26 lbs. Canada 2-row 1 lb. Bairds Crystal ( 70L ) 1 lb. 15 Gallons This is a little more hoppy than my last one. I mash hopped this one to get a more gentle hop bitterness out of it. Some, or even a lot of brewers say mash hopping does nothing. 14 Gallons Cujo's Canadian Amber Ale This is a summer quaffer. I used all Centenial hops to get a nice, medium citrus flavour to it. It is very hot out now, ( 30C ) for the first time this year. 14 Gallons Max's Pub Ale This is a light, summer brew to use up some older hops. I am still brewing lighter beers at least for a while until fall gets here. I hope to get my new temperature controler wired soon so I can brew more beer. 22 lbs. Canada Malting 2-Row 1 lb. Flaked Barley 8 ozs. Crystal ( 70L ) 71 grams Hallertauer ( 3.6% AA ) 40 grams Mauribrew Ale Yeast ( 514 ) O.G. - 1.044 F.G. - 1.014 % - 4 SRM - 6 BU - 15.5 The fermentation is winding down to a slow, but steady rate. This yeast is much faster than Nottingham. I will let this ferment for 14 days to clear properly. This beer turned out well. Very light and tasty. I should of brewed this last April. This is a good summer brew that goes down great and is all malt. Too bad the big brewers are too cheap to brew a light beer with flavour. This is pretty light. Brewing hoppy ales the last while, this beer is nice, but I don't think I will brew it too often. I want beer with tons of hops in it. Hophead? I guess...

15 Gallons 3 Dog Summer IPA This is a lighter version of a true IPA. I want that citrusy taste, but not too bitter for around the pool if we will ever sit around it. 22 lbs. Canada Malting Pale Ale Malt 1 lb. Flaked Barley 1 lb. Crystal ( 75 L ) 8 ozs. Biscuit Malt 50 grams Galena ( 60 min ) ( 7.1% ) 28 grams Centenial ( 30 min ) ( 8% ) 28 grams Centenial ( 0 min ) ( 8% ) 60 grams Mauribrew Ale yeast ( 20 grams each in 3 carboys ) O.G. - 1.046 F.G. - 1.012 % - 4.5 SRM - 7.4 BU - 27.2 I went with 3 carboys because I am greedy and thought I could squeeze out more beer than usual. It almost worked. I had to add a gallon of RO water to the last one. No big deal. It will be extra light I guess. I am working on to get 3 carboys full of beer with no dilution in the future. Biscuit 70 gms ( 3.6% AA ) Hallertauer ( 60 min ) 23 grams US - O5 yeast O.G. - 1.048 F.G. - 1.012 % - 4.8 srm - 7.4 BU - 14.6 This is a summer pool beer. I only make this once or twice a year for around the pool for company. It is not my favourite style because of lack of hops, but is a good quaffer anyway. This beer is infected by something. It didn't look right two days into fermentation. Slime like shit on the top of the carboy. I knew that something was up. I just don't know what or why? Try again I guess and keep up the sanitation and hope for the best. Summer brewing, I don't like it. Too much humidity, crap in the air etc...

10 Gallons 22 lbs. Canada Malting 2-row 1 lb. Bairds Crystal 1 lb. Flaked Barley 8 ozs. Biscuit Malt 25 g 7.1% AA - ( 60 min ) 35 g 11.4% AA Chinook ( 30 min ) 20 g 11.4% AA Chinook ( 20 min ) Wyeast 1056 & Wyeast 1272 O.G. - 1.050 F.G. - 1.012 % - 5 SRM - 7.4 BU - 26.5 I used a stir plate for this first time on the 1272. I have only one and I plan on making my own. It is still up in the air if a stir plate is needed. I used a 1000 ml flask for this starter. I broke the other one. I may get just a 2000 ml flask or a 5000 ml starter if this will handle it. As far as a stir plate is concerned, it started ahead of the one that didn't have one, but not that much. An hour or two maybe. There was just a slight difference between these yeasts. The 1272 was fruitier and had more flavour, and the 1056 was neutral. Both are still clearing, so I will know more in about a week.

I don't want too much bitterness for a hot summer day, ( well if we get one here with global cooling ). I find that there are a lot of IPA's out there that have either too much bitterness, or too little. The beer from the US has too much, and the beer from Ontario has too little. I have had a couple from Ontario that were just right. Square Nail Pale Ale from the Publican House here in Peterborough is nice as well as Church Key's West Coast Pale Ale is nice too. Lady Lager 14 gallons 27.50 lbs. Canada Malting 85 grams Czech Saaz ( 60 min ) Saflager 34/70 dry yeast ( rehydrated ) O.G. - 1.058 F.G. - 1.014 % - 5.8 SRM - 5 BU - 15.5 This beer is a tribute to my dog Lady who passed away on March 29, 2009. She was 15. The bitterness is pretty low on this one. I should of ordered more hops, but I cheaped out. I haven't had a lot of luck lately in brewing beer and I should not of made a lager at this time. If anything can go wrong, it will certainly go wrong in a lager instead of an ale which may be more forgiving. We will see in two weeks. There was no activity after about 20 hours. I brought it out of the fermentation chamber and let it warm up some. After a few hours it started to ferment. I put it back in and it is going now. I shouldn't have to do this, but I should of doubled my dry yeast. It is fermenting good now. I may need a blow-off hose. My temperature strip only goes down to 58F, so I am only guessing that it is slightly too...

3 Dog IPA 25 lbs. Canada Malting Pale Ale 1 lb. Bairds Crystal 28 grams Galena ( 60 min ) 40 grams Chinook ( 30 min ) 30 grams Chinook ( 20 min ) 16 grams Chinook ( 0 ) 11.5 grams US - 05 O.G. - 1.052 F.G. - 1.016 % - 4.74 SRM - 7.2 BU - 40 I used up all my Chinook pellets. It has a nice citrusy finish, but the Galena is very noticeable. It will mellow out though, it always does. I kegged 5 gallons and it has a nice, citrusy flavour with limited bitterness. I assume it was the higher finishing gravity that is over powering the bitterness somewhat. It is still there, just not as bitter as I hoped. Good beer though. This is my first IPA using "C" hops. There is a balance here that I have to be careful with. I don't want it to taste like grapefruit. That is why I went with Galena for bittering and Chinook for aroma. This beer is changing quickly. For the better. The citrusy taste is starting to mellow out with the malt and this is getting quite tasty. I am not sure ...

3 Dog Pub Ale 14 Gallons 25 lbs. Canada Malting 1 lb. Bairds Crystal ( 75L ) 65 grams EKG pellet hops ( 60 min. ) 1056 Wyeast Slurry O.G. - 1.050 F.G. - 1.010 % - 5.26 SRM - 7.2 BU - 18.8 I sanitized the neck of the 2 carboys and dumped the slurry into the 14.5 gallon conical. I realize that a lot of homebrewers say not to do this because of over pitching and all that trub ( dead yeast, hop trub etc. ) getting into the beer. I did this once before with no noticeable difference in the finished beer. I won't do it again for brew number 3 though. I'll gather the yeast out of the conical and try to seperate all the bad stuff from the good stuff. The next brew will show me if I did it right.

3 Dog Pub Ale 14 Gallons 25 lbs. G&P Malt 1 lb. Crystal ( 70L ) 45 grams EKG pellet hops ( 60 min. ) 1056 Wyeast O.G. - 1.050 F.G. - 1.012 % - 5 SRM - 6.7 BU - 14 This is the first in batches using and re-using the same yeast. I have two weeks to get more malt and get all my other brews packaged. This will take me into the end of April. After that I have to use some sort of fermentation temperature control. Yes, I love summer, but not for brewing. At least for brewing multiple brews all over the place so easily done in the winter. This turned out good, at least out of the fermenters. I like this yeast. It slowly ferments down to where it should be. I did notice that Nottingham just went crazy for a couple of days. I didn't like the resulting beer. Maybe it just fermented too fast? I will leave that question to the experts. I won't use it again.

3 Dog English IPA 14 Gallons 22 lbs. G&P 2-row 1 lb. Crystal Malt ( 70L ) 8 ozs. Biscuit Malt ( 25L ) 145 grams EKG hop pellets ( 60 min ) 23 grams US - O5 O.G. - 1.044 F.G. - 1.008 % - 4.73 SRM - 6.9 BU - 45 This beer has turned out nice. It has a nice hop bite to it and it tastes somewhat like an English ale I just bought at the LCBO. I does need, however some roasted or dark malt to get a darker colour. The yeast took it down too low for the style. If I use this yeast again, I will mash higher to get a FG of around 12 - 14. At least it tastes good. The last time I bottle conditioned beer, I threw out all of it. I got some sort of infection. I used an old pail on bottling day and that most likely infected it. I have since replaced that pail with a dedicated bottling bucket only pail.

3 Dog Pub Ale 15 gallons 22 lbs. G&P 2-row 8 ozs. Crystal 70L 50 grams EKG pellets 23 grams US-05 O.G. - 1.046 F.G. - % - SRM - 4.8 BU - 14.5 I am using US-05 for a change of yeast. I haven't used it in a couple of years and still here good things about it. I have on hand some 1056, but I am saving that for next month.

Brew Day - February 16, 2009

I am back to brewing this original recipe that I brewed last summer. It is a light ale for around the back deck and pool. I brewed a slight variation of this recipe last month and it didn't turn out very well. 3 Dog Pub Ale 15 Gallons 22 lbs. G&P 2-row 8 ounces crystal ( 70L ) 50 grams EKG pellet hops 24 grams Nottingham dry yeast O.G. - 1.048 F.G. - 1.010 % - 5 SRM - 4.8 BU - 14.5 It was very hazy coming out of the conical. I sure need to clean this up.

3 Dog Stout 14 Gallons 17 lbs. G&P OiO 2-row 6 lbs. Flaked Barley 2 lbs. Weyermann De-husked Carafa III 85 grams EKG 30 grams Nottingham Yeast O.G. - 1.050 F.G. - 1.010 % - 5 SRM - 27.6 BU - 26.2 I used this de-husked black malt for the first time. It has a very light smell to it. It has a low astringent tate to it. I tasted a smooth, creamy roasted malt with no burnt, or strong black malt taste. This sounds good, but I still want that stout flavour.

3 Dog English IPA I lowered the BU's to 39. It was over hopped the last time I brewed this beer. 15 Gallons 17 lbs. G&P OiO 1 lb. Flaked Barley .82 lb. Biscuit malt 1 lb. Crystal malt 130 grams EKG pellet hops 40 grams Nottingham dry yeast ( sprinkled on top ) Mash for 90 minutes O.G. - 1.040 F.G. - 1.010 % - 3.94 srm - 7.3 BU - 39.7 This has come out just like I wanted. Maybe a little lower bitterness than last time, but a nice hoppy light ale. Great head and it tastes fresh. You can really taste the EKG. Much better than the American IPA's which all taste like grapefruit. I hate grapefruit. I can't figure out why anyone would like grapefruit beer. What is the attraction? Well, I got hooked on American IPA's. Once I tasted a few, I really like the taste. It took awhile, but I am going to brew them more often.

Same recipe for awhile. I am brewing as much as I can because I am going to be too busy to brew much next month. 3 Dog Pub Ale 15 gallons 22 lbs. G&P OiO 1.5 lbs. Flaked Barley 1.0 lbs. Crystal Malt ( 75L ) 55 grams EKG hops 38 grams Nottingham yeast O.G. - 1.050 F.G. - 1.010 % - 5 SRM - 6.3 BU - 16 I think I have been using too much flaked barley. I am starting to taste less and less grain flavour and it is tasting bland. It is bland anyways, ( a summer pool beer ) so I am leaving out the flaked barley for this recipe for now on.

Brew Day - January 10 & 11 2009

I am brewing back to back. I have brewed twice the same day and things didn't work out the way I wanted. So, being busy around here lately, I decided to brew two days in a row. I brewed the same recipe because I thought it was easier and I am lazy. The two brew sessions went pretty good. No issues, ( boilovers, etc... ). Since I brew indoors, the brew room looked like a sauna at times because it was -20C and the window was wide open. 14 Gallons 22 lbs. G&P 2-row malt 1.5 lbs. This is my house ale, 3 Dog Pub Ale. A light, easy drinking ale that seems to be a favourite with people visiting my Pub room. Crystal malt ( 75L ) 55 grams EKG pellet hops 40 grams Nottingham dry yeast I do like this beer. Not much in bitterness or hop flavour, but I want to brew this often because I plan on having on hand 10-12 cases of this for the summer. I don't brew much from June until September. I have a temperature controled fermentation chamber, but it doesn't hold more than a batch of brew at a time. I want to have on hand lots of beer for the summer. I have a pool and this goes down good in and around it....
