Brew Day - February 27, 2011

3 Dog Pub Ale 15 Gallons This turned out pretty good, so I am going to brew it again. I am using saved yeast from the last brew, so I may as well use the same recipe. 22 lbs. Canada Malt 1 lb. Weyermann Crystal 10L 80 grams Hallertauer - 60 min. WLP001 Cal Ale slurry O.G. - 1.042 F.G. - 1.010 % - 4.2 SRM - 4.2 BU - 20 Seems to taste a little smoother than the last one. I guess re-using yeast is better. I got 300ml of washed yeast from my 14.5 gallon conical. I think if I opened the lid after draining to my kegs, I will get more yeast. I will have to add 2L of sanitized water and wash the yeast. 300ml seems a little low.

Stewart Line Keg House Ale An old recipe I saved and never brewed. 14 Gallons 22 lbs. Canada Malt 1 lb. Aromatic Malt 1 lb. Munich Malt type 1 1 lb. Special B Malt 1 lb. Crystal 80L 28g Centennial MH 28g Amarillo MH 28g Centennial 60 min. 28g Amarillo 60 min. 28g Centennial 20 min. 28g Amarillo 20 min. 28g Centennial 10 min. 28g Amarillo 10 min. 28g Centennial 0 min. 28g Amarillo 0 min. Nottingham yeast O.G. - 1.046 F.G. - 1.009 % - 5 SRM - 12.8 BU - 50 I have been getting a cloying taste with recipes that use a ton of "C" hops. On a whim I decided to mash hop. That seemed to work, at least for this recipe. I kegged one of two carboys early, just to see what it would be like. It has a smooth, firm bitterness to it. No cloying at all. I am not sure if cloying is the word I am looking for. In the past I tasted an over the top bitterness or hop taste that I didn't like. 3 Dog Pub Ale This is a simple ale using yeast I haven't used in 5 years. I went back to my old records and found that this was one of the best beers I have ever made using this yeast.
