O.G. - 1.092 DAY 10 May 6 - 1.000 DAY 15 - .995 F.G. - .995 % -   13 I will do the other half when I stop using this pail. I cracked the other lid making beer. Day 1 - Pitched the yeast Day 2 - Started normally. Day 3 - Same, I don't lift the lid, but I can smell it fermenting. 72 F. Day 4 - 76 F. Turned down heat. Day 10 - Racked to a carboy. Low level of wine in carboy. I am sure I added enough water at first.               Next one I will add water up to the first ring in the pail. I did get a ton of oak chips that               plugged up the syphon hose. There was more trub in this wine that ever before. The carboy               is more hazy than I have ever seen these kits. It did ferment down to 1.000 which usually               never does at this stage. usually around 1.005 on day 10. Trying to get the temp up ...

Going to re-use my Biergarten yeast again and this will be the last time. Been using it since last August. I think I did good with this yeast, saved a ton of $$$. Using my spare German hops I had in the freezer. Will taste different, but hopefully good. The wort did taste good. Actually it was close to Pils malt. I realize it may not taste like Weyermann Pils Malt, but seems to be way better than any 2 row from Canada as of yet. This brew will let me know what is going on with my usage of Nottingham Super yeast brews. All of them had a funny taste which is unpleasant to me. I will use US-05 for my Mild just to be sure. Ingredients 13 lbs. Proximity Malt 8.5 g German Magnum at 60 min. 28.35 g of Hallertauer Hersbrucker at 60 min. Making a Kolsch like beer using Nottingham super yeast. This is the yeast OBK has been sending me lately. If it turns out good, I will make this all summer along with my Cavan IPA. I have re-named my Trump Ale as he is an asshole now that he is stopping shipments of N95 masks to Canada. He was an entertaining asshole but now he is worse than the virus itself. Hope he gets it and dies a slow and painful death. Ingredients 10 lbs. Proximity Malt 8 ozs. Munich 8 ozs. Carapils 65 g Tettnanger at 60 min. 28 g Tettnanger at 0 min. Nottingham Super yeast This yeast finishes in 4 days. I couldn't believe how strong it ferments. Fermented slower at 62 F - 64 F. No issues with the bung coming out at a slower ferment.
