15 Gallons This is a clone of my favourite beer, Beaus Lugtread Kolsch. After a taste on kegging day I would say I am close somewhat. My bitterness isn't high enough but that is easy to fix. I moved the Hersbrucker hops to flame out instead of 15 min. I taste a lot of sulphur after kegging. I realize it is early and it needs to age but I will try another yeast with this recipe that I can turn over quickly because I want to bottle it and don't want to age it a long time before I do that.I forgot to boil it for 90 min. I did boil for 70 min. though, hopefully that was enough. 22 lbs. Weyermann Pilsner malt 1 lb. Toasted Wheat Flakes Perle hops - 37.50 grams - ( 10.20 AA ) - 60 min. Hersbrucker - 28 grams - ( 2.00 AA ) - 15 min. WLP029 Kolsch yeast 50/50 RO/Spring Water 5.2 PH Buffer - 2.5 tbsp. O.G. - 1.050 F.G. - 1.014 % - 4.7 BU - 23 SRM - 3.2 Efficiency - 88% FTBS

                                                                     JSHRMA 15 GALLONS This is a slightly less malty bitter than my last one. I never used Pearl malt before and it is more malty than my regular Canadian 2 row. With the addition of 2 lbs. of Crystal 60, I thought it was over the top too malty. There are a lot of English style beers out there that pretty well tasted like the last one I made. I just think they are too cloying in a crystal malt kind of way. 22lbs. Pearl malt 11.5 ozs. Recipe 22 lbs. Weyermann Pilsner 1 lb. Crystal 40 35.5 g Perle hops - 60 min. Mmmm Brains I Want Your Brains!!!!! 15 Gallons This is the last of the NotSoGreat Western Malt which has given my beer pernament haze since I bought this first bag way back in April. I added some extra stuff in this ESB to hopefully solve the problem. I am going to be buying 7 bags of grain soon and want this problem solved. I added 5.2 PH buffer and clarity ferm. Here goes nothing. This was the last of the sack and good fucken ridence I say. 23 lbs. NSGWM - ( 92% ) 2 lbs. Crystal 75 - ( 8% ) 50 g UK Target @ 60 min. 10 AA. Wyeast 1469 West Yorkshire 50/50 Rocky Ridge Spring/RO water 3 tbsp. of 5.2 PH buffer in mash water only. Clarity Ferm ( 10 ml ) in the Conical. ( Did not work, chill haze evident, like soup ). Kegged on Nov. 3. I found them in the back of my freezer. They had a wonderful aroma to them. This beer is okay, not my favourite style. I need to mash higher to get a more of a malt taste. however, I am going to buy Muntons malt so it will have more flavour than this bland American 2-row malt.       ...

This is my second Belgium brew. Brother Chris 28 lbs. GWM 2 lbs. Belgian D-45 2.53 lbs. Corn Sugar 1 lb. Aromatic Malt 5 ozs. Carafa III 100 grams Spalt Select - 60 min. Wyeast 1762 Abbey Ale II ( stepped up 4.5 L starter ) 50/50 RO/Well O.G. - 1.070 * 82% efficiency * F.G. - 1.012 % - 7.7 BU - 33.7 SRM -11 Bottled on Monday, Oct. 14, day 23. Took over 4 hours to bottle. I had to work with many different sized bottles. I carbed it to 3 volumes with 163 grams of corn sugar per 5 gallons. FTBS The first time I brewed this my efficiency was only 60%. It was supposed to be 1.080, but was 1.060. Now I just decided to make a 1.070 beer and forget about brewing a high gravity one. Maybe in the future, but I will be happy to make a 7-8 % beer and get double the amount. This will be the beginning of my beer celllar.The FG will have to get down to around 12 for a 7-8 % beer. NEEDLERS MILL                                                                             My last 2 pale ales have had pernament haze to them. I am not sure why this has suddenly started to happen. I have had trouble with my older digital thermometer and my floating thermometer seems to be okay, but very slow. My mash may of been not high enough, say 145 F or something like that. My PH may of been too high which seems to be the most common answer from my beer forum. I bought some PH strips to sort of get me in the ball park of where I am. They are not very accurate though. ( 5.5 AA ) Wyeast 1098 British Ale - ( 4 L starter with one package ) 50/50 RO/Well water O.G. - 1.054 - 83% EFFICIENCY F.G. - 1.014 % - 5.3 SRM - 10.4 BU - 32.6 FTBS This beer turned out very good. Cleared up with gelatin and I will brew it again.

Needlers Mill 30 Gallons ( double batch brew day ) 25 lbs. 2 row 1.31 lbs. Wheat malt 62 grams Hallertauer - 60 min. US-05 ( did not rehydrate the yeast, but used twice the amount ) 70% RO water O.G. - 1.047 F.G. - 1.010 % - 4.9 BU - 25 SRM - 3.6 I am using Great Western Malt from Country Malt from the Pacific Northwest US. UCM had only this and the price went from $47.50 to $51.70. The bags are only 50 lbs. instead of 55 lbs. This means I got ripped off 15 lbs. for $12.00 more. Got to find a cheaper place to buy malt but with the price of gas, this may not be possible. The price is still around $9.00 a case.  Cavan Table Beer 5 Gallons This is another Belgian Golden style that I brewed last year. It was really good, even with the low efficiency I got. 60%, but I did have a boil over. I was only boiling 7 gallons in a 15 gallon pot and still had a boil over. Never, ever use two elements in a 7 gallon boil. Too high of heat. Lesson learned. I am going to mash 6.7 gallons and go from there. With a 90 minute boil, I will need a couple of extra gallons of wort from the mash. I heated up around 7 gallons of sparge water. Of course I won't use it all. 7-8 gallons ( pre-boil ) 15 lbs. Bohemian Pilsner malt 2.88 lbs. corn sugar ( 13.9% ) 1.88 lbs. Wheat malt 1 lb. Aromatic malt 60 g Tettnang - 60 min. 30 g Spalt Select - 30 min. WLP530 Abbey Ale - 3 L starter that was cooled and decanted. 100% well water O.G. - 1.068 - 61% Efficiency F.G. - 1.020 % - BU - 35 SRM -9 Yeast pitched @ 64F for 2-3 days and I am letting it get to around 21C until done. CUJO 14 Gallons Split batch using two different yeasts, but same temp @ 65F Khris's Kolsch 25 lbs. Bohemian Pilsner 1.31 lbs. Wheat 70 g Hallertauer Tradition ( 60 min ) 7% AA WLP029 -  Kolsch WLP080 - Cream Ale Blend ( first time using this ) O.G. - 1.056  F.G. - 1.016 - ( 029 ) - 1.016 ( 080 ) % - 5.3 BU - 27.6 SRM - 3 Efficiency - 84% FTBS I can't figure out why they didn't finish lower than 1.016. The 080 started quickly and went for 2 weeks. Other than the low attenuation, the Kolsch is a nice tasting beer. The 080 ( Cream Ale Blend ) still has sulphur after 2 weeks in the keg. A nice pool beer on a hot summer day.

Cavan Blazers House Ale 15 Gallons 70% RO 30% Well 25 lbs. Bohemian Pilsner 1.31 lbs. Wheat 77 g Hallertauer Tradition ( 60 min ) 40 g US-O5  I am so excited to see how this turns out... O.G. - 1.050 F.G. - 1.014 % - 4.7 BU -31 SRM - 3 FTBS This beer turned out fine. I am not sure if I like Hallertauer Tradition hops yet. It is still young beer, so an update in about 2-3 weeks is in order. This was a very crisp, hoppy and clear beer. The BU were kind of high, but mellowed out in a couple of weeks or so. So far the US-05 yeast has made the best beer so far with this recipe. I am trying different yeast, all liquid. WLP001 is going to be used with this recipe soon. Update to follow.
