One more shot at a Helles. Going with the German Brewing Water Profile. Ingredients 13 lbs. Weyermann Floor Malted Pils Malt ( Milled on notch 3 ) 80 g Tettnanger at 60 min. 1 oz. Tettnanger at 0 min. Escarpment Labs Biergarten Lager yeast German Brewing Water Profile CA - 22 S04 - 31 CI - 39 PH - 5.30 O.G. - 1.051 - 80% F.G. -  1.012 % -      5.13 SRM - 3.5 BU - 25 I think I am going to brew way more ales than lagers this year. I bought 5 lbs. of Chinook hops so brewing Trump ale and similar styles is way easier than going with hit and miss lagers. Wort tasted like a real Pilsner should taste. I am half way there, so I hope the rest tastes just as good. Wort didn't clear that much in Mr. Robobrew before going in the carboy. I didn't do a whirlpool as I think I should anyway. I had a ton of trub under the false bottom and some dark chunks of stuff too. My yeast flask didn't have a lot of yeast on the bottom. Hope it was enough. ...

One more time to brew this bitter. Using real UK malts this time which will make a huge difference. No English yeast though, using my Trump Ale yeast, have to cut corners somewhere as Corporate is always nagging me to stop spending money. Ingredients 10 lbs. Marris Otter 1 lb. OiO 8 ozs. Sask Wheat 6 ozs. Carastan 6 ozs. Thomas Faucett Crystal 85 L 1 ozs. Special III 40 g EKG at 60 min. 2 ozs. EKG at 20 min. ( supposed to be 10 min. but they got tossed in by mistake ) 2 ozs. EKG at 0 min. Escarpment Labs Cali ( not an English yeast, but I do have it ready to go ) O.G. - 1.046 - ( milling the grain twice, may have a higher OG ) F.G. - % - SRM - 9.3 BU - 44 I haven't used Marris Otter in many years. Should of been using it all along. Not cheap though, as in all ingredients today, expensive. I do want a true English bitter, but using Cali yeast should be okay for now. 5.5 Gallons Changed the Cavan IPA recipe to reflect what grains I have on hand. Trying to keep it simple and get a lighter colour to it. I still want to clone Square Nail, but do not have the specialty grains figured out yet. Ingredients 11 lbs. UCM 1 lb. Munich I 6 ozs. Thomas Faucett Crystal 85 L 31 g Chinook at 20 min. 75 g Chinook at 5 min. ( Should of been 10 min ) 56.70 g Chinook at 0 min. 56.70 g Chinook - Hop Stand 28.35 g Chinook - dry hop 3 - 5 days before kegging Escarpment Labs Cali PH - 5.32 O.G. - 1.044 ( turned mill down to notch 3 ) F.G. - % - SRM - 6.2 BU - 33.5 Since I got yelled at for buying homebrew supplies, I am not sure if I am going to go with a new recipe with specialty malts.
