Wort on slurry. Haven't done this yet, but am doing it now. Getting a keg ready the day before to keg the next morning. Well, that didn't happen. Ingredients 11 lbs. Weyermann Pilsner Malt 9 ozs. Munich Malt 76.70 g Saaz - 2.8% AA at 60 min WLP810 San Fran Lager Slurry ( wort on slurry ) Water Profile - My Helles/Kolsch CA - 50 S04 - 70 CI - 70 PH - 5.31 O.G. - 1.050 F.G. -  1.010 % -      5.2 SRM - 3.4 BU - 25 Going with just a 60 min addition of Saaz today. My history using Saaz is not that great. I just can't seem to get a lot of bu/aroma out of them. Now I don't care as this is the last of my stock and will go with Hallertauer for now on. 23 L O.G. - 1.090 Day 10 - 0.995 - ( current alcohol is 12.8% ) F.G. -      0.992 % -         13.5 Just one wine kit for now. Carboys have beer in them. I have 4 to make and will put down another one as soon as any carboys are free. OG is 1.090. That is a first. Best I ever did was 1.086. Don't forget to top up in the secondary when told to with your previous wine. The room really smells strong compared to when I used an air lock. I just put the lid on the pail without securing it or using an air lock. The Wine Shoppe does it this way, as do most others, so me too. No temp strip on pail, but will get one soon.                                                                   FERMENTATION NOTES Having trouble keeping it around 72 F. Trying out some Columbus hops ( 17.3% AA !! ) I haven't used in 10 years. This will be a malty beer so I need lots of hop bu/aroma to balance it out. Pilot brew, so things can easily change but ingredient stock is low. Ingredients 11 lbs. UCM 1 lb. Crystal 40 - Breiss 8 ozs. Crystal 120 - Breiss 10 g Columbus - 17.3% AA at 60 min. 10 g Columbus - 17.3% AA at 30 min. 10 g Columbus - 17.3% AA at 15 min. 56.70 g Cascade - LD Carlson - 7.1% AA at 10 min. 56.70 g Cascade - 7.1% AA at 0 min. Sample 5 days before kegging and if hop aroma is low, toss in 1 oz. of Cascade. Ball is cancelled today because it's been raining for 2 months now. The bloody season may be cancelled as it just keeps on raining and raining... This was supposed to be a Cavan Uncommon but don't have enough specialty malts, but I can brew a Helles. Thinking back I should not of used the Carahell and lowered the amount of Munich to .75 lbs. Too malty for the style. My next Helles will be the final recipe, but am working on the hop BU. May go to 25 BU. Ingredients 11 lbs. Pils Malt 1 lb. Munich Malt 8 ozs. Carahell Malt 56.70 g Tettnang - 3.2% AA at 60 min. WLP810 San Fran Lager Yeast Water Profile - Helles/Kolsch CA - 50 S04 - 70 CI - 70 PH - 5.30 Not sure how the 810 yeast will do for a Helles, but it is a lager yeast, at 64 F. Will see.
