25 lbs. Canada Malting 2-row
1 lb. Bairds Crystal ( 75 L )
1 lb. Biscuit Malt ( 25 L )
1 lb. Flaked Barley

28 grams Galena - 7.1% AA ( 60 min )
30 grams Chinook 11.4% AA ( 30 min )
20 grams Chinook 11.4% AA ( 20 min )

US 05 dry yeast

This is my version of a summer IPA. I don't want too much bitterness for a hot summer day, ( well if we get one here with global cooling ). I find that there are a lot of IPA's out there that have either too much bitterness, or too little. The beer from the US has too much, and the beer from Ontario has too little. I have had a couple from Ontario that were just right. Square Nail Pale Ale from the Publican House here in Peterborough is nice as well as Church Key's West Coast Pale Ale is nice too. I haven't had more than these two that were worth mentioning. Alexander Keith's IPA is a sad and insulting version of an IPA. They should be ashamed of themselves for calling their light lager an IPA. Someone should sue the bastards. I do however, need to get more of a citrus hop aroma and taste without the high bitterness that goes along with it. In other words, I have to quit being cheap and add more chinook hops at flame out. This beer turned out nice. It is almost carbed up now.
