Brew Day - December 26, 2009

3 Dog Stout

Today is just an extra brew because I have a craving for a stout. I have on hand some black malt that needs to be used up.

14 lbs. Canada Malting 2-row
6 lbs. Flaked Barley
2 lbs. Carafa Special De-husked III
2 lbs. Roasted Barley
60 grams Northern Brewer hops ( 60 min )
25 grams Northern Brewer hops ( 30 min )
40 grams Nottingham yeast

O.G. - 1.045
F.G. - 1.012
% - 4
SRM - 44.6
BU - 40.2

This has a lot of roast character to it. I saved one keg for the summer months. It may mellow out by then. I like a good roasted character in my stouts and I may go with more Carafa malt and less roasted barley. I have lots of time to figure that out. Today is April 16. I thought I would sample a bit to see how it is doing after so many months. This has really mellowed out since last winter. It had back then a rough, harsh roasty taste to it. Now, that is not a bad thing. I personally like that in a stout. I don't like that famous brand from Ireland because it is too wimpy. It is catered to the BMC, which in my opinion can kiss my ass. They don't like beer anyway. That is obvious. I think I need to make another batch for the summer.
