Brew Day - September 1, 2009

15 Gallons

This is a little more hoppy than my last one. I mash hopped this one to get a more gentle hop bitterness out of it. Some, or even a lot of brewers say mash hopping does nothing. Well, I will know more in a couple of weeks.

3 DOG CANADIAN AMBER ALE

22 lbs. Canada Malting 2-row
1 lb. Crystal ( 70L )
1 lb. corn sugar
1.25 ozs. Flaked Barley

28 grams Chinook hops ( 11.5% AA ) MH
14 grams Chinook hops (11.5% AA ) 60 minutes
14 grams Chinook hops ( 11.5% AA ) 40 minutes
14 grams Chinook hops ( 11.5% AA ) 20 minutes
28 grams Chinook hops ( 11.5% AA ) 1 minute
40 grams Mauribrew Ale yeast

This is a tasty brew. I didn't get the hop bitterness I was after though. I just kegged it, so after adding Gelatin for a few days I will carb it up and get a better idea of where I sit with the bitterness. It was smooth though. I didn't get that up front cloying bitterness I usually get when I load the 60 min. addition of hops in. I guess mash hopping is okay, as in a smoother bitterness. 7 days from now I will know if I want to mash hop again. All in all, a real tasty beer. I crash cooled the conical fermenter for a few days before kegging and the beer was pretty clear. I didn't get the inside valve dip-tube situated down more and that resulted in a couple of litres of leftover beer. I will fix that for the next brew session. This beer seems to be oxidized. It took one day to turn. I tastes stale. One day it had that sweet malt taste and the next day it was gone and replaced with a stale flavour. I must of splashed the Gelatin in, or didn't purge the kegs as good as I should. I will really have to more careful in the future.
