4 Dog Pub Ale Double Batch Brew Day First Session - 23 L carboys 25 lbs. Weyermann Bohemian Pilsner Malt 1.34 lbs. Wheat Malt 8 ozs. Acid Malt 76 G EKG ( 60 min ) WLP060 - American Ale Yeast Blend + US-05 100% RO water with added salts to the mash and boil. O.G. - 1.058 F.G. -  1.014 % -    5.8 BU - 22 SRM -  3.3 Kegged Dec. 3 Second Session in 14.5 gallon SS Conical 25 lbs. Weyermann Bohemian Pilsner Malt 1.34 lbs. Wheat Malt 8 ozs. Acid Malt 80 G EKG - ( 60 min ) US-05  100% RO water with added salts to the mash and boil. O.G. - 1.054 F.G. -  1.014 % - 5.3 BU - 22 SRM - 3.2 Kegged Nov. 28 FTBS

Just Sitting Here Resting My Arm English Style Ale 13 Gallons ( Post Boil ) 23.5 lbs. Canada Malt 1 lb. Carastan Malt .97 lbs. Crystal 120 .81 lbs. wheat malt .31 lbs. Acid Malt 110 grams EKG ( 60 min ) 50 g S-04 rehydrated with RO water. ( RO water didn't harm the yeast viability at all ) RO water with brewing salts 2 tsp gypsum to mash and boil 2 tsp calcium chloride to mash and boil 1 tsp of epsom salt to mash and boil CA - 110 MG - 12 CI - 127 S04 - 162 Chloride/Sulphate Ratio - .79 ( balanced according to EZY water calculator) FTBS O.G. - 1.060 F.G. - 1.012 % - 6.3 BU - 29 SRM - 9.5 90% mash efficiency. A nice and malty beer. No harsh or astrigent flavours at all. Kind of bready with the S-04 yeast, but this brew was a success using salts for the first time.

I am using carboys this time because I want to use different yeast. I used to use Coopers yeast years ago and thought, "Why not give it a try?" Besides, I have only one vial of Cal Ale yeast. Cavan Blazers Pub Ale 10 Gallons 18.50 lbs. Canada Malting 2 row 1 lb. Carastan Malt 1 lb. Honey Malt 1 lb. Wheat Malt 70 grams EKG - 60 min. WLP001 Cal Ale yeast Coopers ( rehydrated ) 70% RO water 30% well water ( water softener turned off day before brew day ) 1 1/2 tsp yeast nutrient last 15 min of boil 1 tab whirlfloc last 7 min of boil O.G. - 1.042 F.G. - 1.014 - Coopers 1.010 - WLP001 Coopers - 3.7% WLP001 - 4.2% BU - 20.8 SRM - 5.6 The Coopers finished in around 5-6 days @ a temp of around 68F. The thermowell I used for the first time was installed in the Cal Ale carboy. I kegged the Coopers early and it was okay, but very fruity. Canada Malt 1.5 lbs. Carastan Malt 1 lb. Wheat Malt 50 grams EKG - 60 min. WLP 001 6 grams Wyeast nutrient 1 whirlfloc O.G. - 1.044 F.G. -  1.010 % -      4.5 BU - 16 SRM - 5.5 Efficiency - 77% FTBS

Cavan Blazers Blonde Ale ( Double Batch )  Batch One 14 Gallons  I got around 19L each in two 23L carboys. 20 lbs. Canada Malt 2 lbs. Munich Malt ( 6L ) 1 lb. Carastan Malt ( 34L ) 67g EKG - 60 min. 50g S-04 split between two carboys - sprinkled on top Fermented @ 17C - 62F to get a clean fermentation. O.G. - 1.044 ( 75% EFFICIENCY ) F.G. - 1.012 % - 4.2 BU - 20 SRM - 5 FTBS Batch Two 15 gallons 22 lbs. Canada Malt 2 lbs. Munich Malt ( 6L ) 1 lb. Carastan Malt ( 34L ) 72g EKG - 60 min. 100 g S-04 - sprinkled on top Temp of wort - 64F. I set the fridge to 17C - 62F to get a clean fermentation O.G. - 1.050 F.G. - 1.013 % - 4.9 BU - 23 SRM - 5 FTBS

Cavan Blazers Harvest Ale I have brewed this beer since 2008. This was a style of beer that was very hard to get around here in Ontario back then. I had a few in the US and bought a six pack of Church Key West Coast Style IPA, which is fantastic. Of course, living in Ontario beer prices are too high so I decided to make my own. I brew this style of beer more than any other. I like my west coast style of beer to be dry. That is why I added corn sugar. It works. 15 Gallons 23.50 lbs. Canada Malt 1.88 lbs. corn sugar 1.44 lbs. Carastan Malt 1 lb. Munich Malt ( 6L ) .56 lbs. Acid Malt 85.05 g horizon hops  ( 60 min. ) 40 g Amarillo ( 10 min ) 50 g Centennial ( 10 min ) 40 g Amarillo ( 0 min ) 40 g Centennial ( 0 min ) 3 Sachets S-04 ( 62F) 6 g Wyeast Yeast Nutrient ( 15 min ) 1 unit Whirlfloc ( 7 min ) 3 tsp. of gypsum 3 tsp. of calcium chloride 1 tsp. of epsum salt ( all water additions were added to the mash and the boil ) 100% RO water O.G. - 1.060 F.G. ...

Brewday, Sunday, July 1, 2010 Millbrook Springs 15 Gallons Another try at a lager. I have used many lager yeasts, liquid and dry. I had good success with the White Labs Pilsner yeast, but the cost is way too high here in Canuck land. If I can get it 2 weeks old, I wouldn't have to buy 6-9 vials @ $10.00 + a vial. Fuck that. I bought a brick of S-189 and vacuum sealed it in 100 gram packages. This is my first brew using water salt additions. I am using 100% RO water. Here I used 10 gallons in the mash and 10 gallons in the sparge tank. 26 lbs. United Canada Pilsner Malt 1 lb. Munich Malt 1 lb. Carastan Malt 9 ounces Acid Malt 100 grams EKG ( FWH ) 100 grams S-189 ( no rehydration ) 2 grams Gypsum in mash and boil 5 grams Calcium Chloride in mash and boil 4 grams Epsom salt in mash and boil 6 grams of Wyeast nutrient the last 15 minutes of the boil 1 whirlfloc tablet the last 5 minutes of the boil. Brew Day - Sunday, June 17, 2012 Cavan Blazers Blonde Ale 15 Gallons I installed new electric elements in my mash tun and sparge tank. Everything seems to be working okay. I just have to keep the elements free from any build up. 27.50 lbs. United Canada Pilsner Malt 1 lb. Carastan Malt ( 34L ) .38 lbs. Baptiste Lake Bitter 15 Gallons This is the first time using WLP037 Yorkshire Square yeast. I have heard good things and bad things from this yeast. Here goes nothing. 22.50 lbs. Canada 2-row 1.5 lbs. Crystal 120 1.00 lbs. Carastan Malt 65 grams EKG - 60 min. WLP037 Yorkshire Square Ale O.G. - 1.043 F.G. - 1.012 % - 4.3 BU - 18 SRM - 11 FTBS It is still fermenting away on April 30. It will be kegged on May 16.

This is yet, another version of this style of beer. I hope to get a lot of hop aroma with this beer without the bitterness. I kept the specialty malts to a minimum so it is all hops and with just enough maltiness to balance it out. I guess this is an CIPA light.
