I may need help to lift the water bottles to fill the pails up. Rib damage from hockey. March 22 - Mixing it all together. Red - 1.086 White - 1.086 DO NOT FORGET TO ADD 1.5 GRAMS OF POTASSIUM BETABISULPHATE ON DAY 26, JUST AROUND WHEN YOU RACK IT TO FILTER/BOTTLE. I filled up the pail to the top of the first rim. Marty said he doesn't care about the %, so I did the same to his as to mine. I am thinking I should not do this next time. However, my white is nice. But a tad watery. Yea, do not add any extra water. I think I went way too far.                                              YEAST PITCHED AT 1:30. These instructions are slightly different than the usual Costco wine kits. They say to  ferment it 14 days instead of the usual 10. I always did that anyway.   Hope to get both of these Costco kits going today.  Yeast pitched at 10 am and 11 am. I topped it up to 25 L instead of 23. I did it before and I  really liked the wine as it was light and refreshing. No gravity check because I know it will be around 10% if it gets down to .996 - .998. It is .992.                                 RACK TO CARBOYS ON FRIDAY MARCH 13 Next Morning - 22C - Heater seems to be always on when I visit them.  Day 2 - 22 F. Day 3 - Too warm - 75F. Turned down wall heater. Temps will be dropping rapidly               tonight so it may settle on out. Day 4 - Too cool. 70F. Heat back up. Yikes!! 79F. Heat off. Day 5 - 22C. For now, having a hard time keeping it at a good temp. Day 9 - Very close to being done. Day 14 - .992 to .994. Always hit this exact reading with Costco wine kits. It will be around         ...

I bought my first kegging system in Kingston in 1998. We went to the Kingston Brewing Co. for supper and I was amazed at how wonderful this beer was. I can replicate a cask in a way by giving this an overnight C02 charge @ 30 psi and then using my stout faucet to serve @ 10 psi. That knocks out the C02 and gives it a nice head. Beer gas knocks out aroma and I don't want that, so buying expensive beer gas and renting the tank is out of the question.   Ingredients 11 lbs. Bairds Maris Otter 6 ozs. Simpsons CM 8 ozs. I am out of beer and looking for an IPA to buy. I can't believe the prices. Screw that. That is offensive and completely unreasonable. Fuck them!!! Fuck them all!!!!!!! I am stepping up my brew schedule because of this. My lager won't be ready to drink after aging until April or even May. I have to CPBF them in my PET bottles when it is ready.   Ingredients 11 lbs.   This batch was supposed to be brewed in December, but it is delayed until further notice. Grace gets Murphy dressed up for Xmas 2024. This is the first brew using that enzyme from White Labs ( Brewzyme D ). They say to still do your normal D rest on day 5. I will do just that. I have to put only 5 gallons of wort in the carboy instead of 5.5 or even 6 gallons as it was made for only 5 gallons. That will give me room to get a cleaner and trub free wort getting into the fermenter. I realize you need some trub and I usually do get lots in even if I think I don't get much. I am also not using Pilsner Malt at first. If this is good, I will buy some in 2026. I won't be brewing this on a regular basis until summer.   Ingredients 11 lbs. Rahr 6 ozs. Honey Malt 22 grams Warrior at 60 min. 56 grams Cascade at 15 min. 56 grams Cascade at 0 min. 56 grams Cascade dry hop 3 days before kegging US-05 O.G. - 1.044 F.G. - % - SRM - 4 BU - 45 I am starting to make lagers soon. Make this just to have, toss it on the bench and start to make your lager. I am waiting to buy some Pilsner Malt, so this recipe will be brewed until I run low of Rahr malt. Mash Volume - 5.50 gallons Sparge Volume - 5.00 gallons Mash GYP - 7.3 g CC - 1.7 g EPS - 4.3 g Baking Soda - .4 g Boil GYP - 6.6 g CC - 1.5 g EPS - 3.9 g Lactic Acid Sparge - .2 ml A normal brew day. The boiling wort does smell funny. Not sure why though. I still think that the hops were Hallertauer. God, I hope not.
