5 Gallons Been awhile since I brewed this style of beer. All of those Beaus bottles sitting there empty is not a good thing. I hope to get around 80% efficiency with this batch as in the past I got anywhere between 60 and 74%. Will see how Mr. Robobrew does. Ingredients 14.80 lbs. UCM 4 lbs. corn sugar 5.70 ozs. Aromatic malt 88 g Saaz - 2.80 % AA at 60 min. 10 g German NB - 9% AA at 60 min. 15 g Saaz - 2.8% AA at 10 min. 1762 Belgian Abbey Ale II - ( pitched @ 1:30 pm ) Bottled with 5.30 ozs. corn sugar ( 2.90 Volumes )                                                                         NO STEP MASH TODAY The grain was too high in the mash and I couldn't recirculate the wort. Infusion mash today. I think the silicone ring that was around the malt  pipe screen was stopping it fr...

12 Gallons This replaces my Helles as I am brewing Kolsch beers, so that is good enough. I like this style of beer and will brew it as my house lager. Ingredients 11 lbs. German Pilsner Malt 9.5 ozs. Carahell Malt 6 ozs. Victory Malt 3 ozs. UK Choc Malt - 300 L 30.50 g German NB - 9.9% AA at 60 min. 2 ozs. Ontario Cascade - 5.4% AA at 170 F when chilling 1 oz. Ontario Chinook ( dry hop ) Escarpment Labs Munich Lager Water Profile - Amber Lager CA - 50 S04 - 75 CI - 63 O.G. - 1.045 F.G. - % - SRM - 8.3 BU - 35 A long day brewing back to back batches. I didn't get a lot of the cascade aroma hop flavour in this beer. Still, the wort was tasty. I hate brewing 2 batches in one day, so I will not do it again. I may wash this yeast, or just use half of it in a future brew. Will brew a Marzen after this as I am pressed for time as May is just around the corner. Will get some San Fran yeast as I can't seem to find any Escarpment Labs equivalent. Hope to brew...

New wort on yeast cake. I added just enough sanitized water to swirl it in my gallon jug. Ingredients 11 lbs. German Pilsner - 95% 9.30 ozs. Vienna - 5% 17 g German Magnum - 12.7% AA at 60 min. 56.70 g Saaz - 2.8% AA at 170 F during chilling. 28.35 g Hallertauer  dry hopped 5 days before kegging. Escarpment Labs Kolsch Water Profile CA - 50 S04 - 70 CI - 70 PH - 5.30 O.G. - 1.047 F.G. - % - SRM - 3 BU - 25 Looks a lot lighter than using UCM.                                                            FERMENTATION NOTES Next Day - Nothing, not a thing. I thought I washed the yeast the right way, now I am rethinking that.                    I am pretty sure I did it right. I added a couple of litres of water, swirled it around, and       ...
