Conical Another try at a simple blonde ale. I hope this tastes like I want these to taste as this is going to be my standard lager/kolsch/helles style beers. Ingredients 23 lbs. UCM 2 row 1 lb. Munich malt type II 100 g Hallertauer - 3.8% AA - 60 min. 50 g US-05 100% RO water with brewing salts. CA - 51 MG - 10 S04 - 71 CI - 69 4.5 ml lactic acid in mash only. UCM LME 40 g Chinook @ 15 min. 100 g Chinook @ 10 min. 56.70 g Chinook @ 0 min. 50 g US-05 100% RO waater ( no brewing salts but may of needed some gypsum ) O.G. -  1.054 F.G. -   1.014 % -       5.27 SRM - 7.3 BU - 29 This 15 minute IPA only took me 4 hours to make. Set up and clean up included. No problems so far, easy peasy... Both carboys going great the next morning. 64 F. May have to turn wall heater on. Wort was low on hop aroma for some reason. I added enough hops, or at least I thought I did. Wait and see. Dry hop only if this extract ( may be stale ) is any good. I did see some pectiles on top of the extract when I opened the pail lid. Also I saw some pieces of grain, ( milled ) too. Where the heck did that come from? Will see in 2 weeks.                          ...

Conical This is the 2nd pilot brew using brewing salts. I credit this to www.theelectricbrewery.com from Kal's website of recipes. This is his blonde/lager water profile. I did it 2 years ago with little success. No idea what went wrong. It tasted funny and I didn't do a repeat. Well, I am not giving up. There must be a reason for the funny taste and I know it isn't from Kal's recipe. So that is why I am going to repeat or maybe even tweek this recipe to get it where I want it. Then, just brew and brew. Ingredients 24 lbs. UCM 2 row 1 lb. Conical I am trying something different with the water salts in this brew. The previous 4 -5 were bland and tasteless and did taste " funny ". No idea why, but the salts were low but supposed to be according to the experts. Well, I guess I am on my own now. I was always low on hop bitterness and especially aroma. I raised the sulphate to 125, so there will be no excuse for lack of taste. Minerally? I hope not. Ingredients: 22 lbs. UCM 2 row 1 lb. Munich II - ( 9 L ) 1 lb. Light Carastan -  ( 15 L ) 4 ozs. Melanoidin - ( 30 L ) 40 g US-05 113 g Hallertauer - 3.8% AA @ 60 min. Conical 11 lbs. UCM 2 row 10 lbs. UCM  liquid extract 1 lb. Carastan ( forgot to buy corn sugar ) 40 g Chinook 12 % AA @ 60 min. 60 g Chinook 12% AA @ 10 min. 56.70 g Chinook 12% AA @ 0 min. 113.4 g Chinook 12% AA dry hop ( 56.70 g in each keg ) 40 g US-05 ( maybe should of used 45 g? ) Mashed grains in pail for 60 min. 1.25 qts/lb. 3.75 gallons water Sparged with 4 gallons water. Used water salts in both. O.G. - 1.054 F.G. -  1.012 % -     5.5 SRM - 6.4 ( Definitely seems darker - 8 -9? ) BU - 37 I will definitely taste this after kegging and adjust the BU if needed. I am dialing in my balance between malt and hops. I am going to buy some other kinds of crystal malts to change it up a bit. Nothing drastic, maybe Crystal 15, honey and biscuit malt. Small amounts of course. Finally kegged this. Still bubbling a bit, but I am brewing in 2 days ( Oct 31 ) so keg it now. Way too much hop shit when I dry hop in the conical. Never again...

Kings Landing IPA - Extract - Monday, October 2nd, 2017

Eleven Gallons - Carboys My first all extract brew in over 20 years. It will be interesting if I get a big hop aroma with no water treatment. This is an experiment for brewing in the winter. I may be able to do a full mash brew next week as the weather seems to be quite warm. 20 lbs. United Canada LME. 40 g Chinook - 12.3% AA @ 60 min. 60 g Chinook - 12.3% AA @ 10 min. 56.70 g Chinook - 12.3% AA @ 0 min. 113.4 g Chinook - 12.3% AA - dry hop ( 56.70 g in each keg ) 45 g in each carboy.  US-05 ( Usually 40, but this OG is way higher than expected ) I really don't expect a lot of extract twang using bulk malt extract. I don't remember it from back in the day, but certainly got it from those over priced kits. I smelled twang when I added it to my water in the kettle, but it went away later in the boil. I did not taste it in the gravity sample. O.G. - 1.068 - ( Promash said 1.051 ) F.G. - % - SRM - 7 ( May be more because of boiling 100% extract for 60...

23 Litres in a Carboy I am just following the instructions that came with it. Boil corn sugar in 2 gallons of water to sanitize it, then add to a sanitized carboy that has room temp RO water already in it. Temp may be high so add yeast when it cools to 68 F. Left it in the carboy for 3 weeks. Added 1/2 of the back sweetener and all of the flavour packet at kegging time. Cleared fine, but not bright. Tastes pretty good.

23 Litres Do the same as your Pear cider. I had to boil 5 litres of RO water from the water cooler along with the corn sugar. I don't trust the water coming from it. Temp was 72 F at pitching time. This stuff is thick in the bag. I need to rinse it out more than I did. Going good the next day. Some foam on top and I will have to watch it getting higher. I don't have any spare blow off hoses, so I may have to add no-foam to keep it from spewing out the top. This tasted more fruity than the Pear, but I do like it. Very easy to make, just pour and ferment.

Daenerys Targayen Blonde Ale - ( 5.5 Gallons ) My first extract brew in over 20 years. More to come this winter as partial mash recipes because they are cheaper to make and will taste better. This is just a test. Most or if not all of my beers will have a " Game of Thrones " theme to them. Pics are easy to get too. 5.5 gallons 9 lbs. UCM LME 18.2 g Magnum - ( 13.3% AA ) at 60 min. 1 oz. Hallertauer - ( 3.8% AA ) at 0 min. RO water 11.5 grams US-05 O.G. - 1.050 - ( Not sure if I measured correctly ) F.G. - % - SRM - 6.4 BU - 28 I had a hard time cooling 5.5 gallons with the chiller on top of the elements. Will not make 5.5 gallons again. Other than that, it was around 3 hours to make. Clean up is easy. Now to see what an extract beer tastes like. It has been 22 years since my last one. Conical 22 lbs. UCM 2 row ( 89.8% ) 1 lb. Carastan ( 4.1% ) 1.5 lb. Simpson Medium Crystal 100 ( 6.1% ) 65 g Northern Brewer @ 60 min. ( 8.5% AA ) 62 g Northern Brewer @ 20 min. ( 8.5% AA ) 100 g Northern Brewer @ 0 min. ( 8.5% AA ) US-05 Water Profile - Try to get as close to Kal's Electric Pale Ale as possible. CA - 102 MG - 26 S04 - 276 CI - 52 2.7 ml Phosphoric acid ( 5.20 PH ) - estimated room temp. I went back to Bru'n Water and with my next brew, NO ACID is required for this recipe. All of those salts bring down the PH so much, that I don't need it. O.G. - 1.049 F.G. - % - SRM - 9.6 BU - 42.3 The last one was okay. It did have an off flavour which I re-used my 833 with. Not sure what happened. 11 Gallons - carboys 22 lbs. UCM 2 lbs. Munich 6 WLP029 28.35 g Magnum - 13.2% AA @ 60 min. 56.70 g Hallertauer - 3.8% AA @ 0 min. O.G. - 1.047 F.G. - % - SRM - 3.7 BU - 21 - I am still working on the hop profile to where I want it using Bru'n Water plus RO water. Either too little hop bitterness and aroma or too much. I'll get it sooner or later I guess. Totally different than my usual recipes from the last 5 years or more. Waiting on the wort to cool in the fridge. Summer temps + well water not as cold as winter water for sure. Stopped early, like on day 4. Gravity is at 1.015 which surprised me. I added a tsp of amyalse enzyme to one carboy but won't do the other one unless needed. I don't want to change the beer into something dry and tasteless. I did rack to a secondary on top of Amy, so we will see how it goes. Sample tasted good, green beer for sure. A good aroma hop taste and lots of BU which I wasn't expecting since it is only 21. 11 Gallons A new style of beer for me. Unfortunately my California yeast was dead on arrival, so I am using my slurry from my lager. I will buy some Wyeast 2112 on a later date if I like this and want to brew an authentic steam beer. 22 lbs. UCM 2 row 1 lb. Carastan 1 lb. Victory No roast malt as Peterborough doesn't stock it. Still a cow town. 70 g Northern Brewer - 8.5% AA @ 60 min. 77 g Northern Brewer - 8.5% AA @ 15 min. 80 g Northern Brewer - 8.5% AA @ 1 min. ( This puts me at exactly 8 ozs. of NB hops ) Slurry of WLP833 German Bock - 2nd generation pitched on June 24 @ 7:30 am 100% RO water with brewing salts - Yellow Balanced NB hops are US hops. Lucky to get them as all I can get now and next year is German NB. I do use US hops for aroma hops, so it really doesn't matter. Carboys This is my first time trying to clone Dragons Breath Ale from Kingston. Hart Brewing from Carlton, Ontario brewed this beer. They are no longer in business though. In my opinion, this was the best beer in Canada and you will no longer find it except at the Kingston Brew Pub. I bet they don't brew the same beer now. 22 lbs. Canada Malt 2 lbs. Honey Malt 1 lb. Carastan 120 g EKG - 5.1% AA @ 60 min. 56.70 g - Cascade  7% AA dry hop in one keg only. Wyeast 1335 British Ale II CA - 50 MG - 9 SODIUM - 4 S04 - 75 CI - 61 3.8 ml of Lactic Acid in mash only PH - 5.30 ( estimated ) Water Profile - Yellow Balanced My yeast was 114 days old ( ? ) when I got it from TB. Nice, I have to wait an extra week to make an extra starter of yeast. When I buy yeast, I expect it to be fairly new. Conical this time This is my summer Pilsner I usually make for around the pool. Of course, using RO water and water salts. This is Eric"s recipe from GTA Brews, so it should be good. Using a good amount of noble hops to get more bitterness and aroma. I am having issues with this so far. 22 lbs. Canada Malting 2 row 2 lbs. Weyermann Munich I 119 g Hallertauer - 4.3 % AA @ FWH 56.70 g Hallertauer - 4.3 % @ 15 min. 56.70 g Hallertauer - 4.3 % @ 1 min. WLP833 German Bock                         Pitched Sat @ 7:30 am CA - 59 S04 - 90 CI -   62 4.5 ml - Lactic Acid in mash only PH - 5.30 ( estimated ) Water Profile - Eric Cousineau This water profile is very close to a " yellow balanced " that is in Bru'n Water. It does look promising since 4-5 years ago the beer sucked balls when I started with brewing salts. I quit doing it instead of staying with it. I do need to add more hops + more specialty grains. All in all I am on the right track so far, small steps though. No aroma hops added. It is fermenting away the same night. Even though it is May 1st, it is very cold out. 3-4 C so I had to turn on the wall heater. Hot everywhere on the planet earth but not here in Ontario. Carboys this time. This is the last of my base malt. Will be away for the bulk grain buy, so I bought some 2 row from UCM. $52.00 a sack - 55 lbs. 21 lbs. Bohemian Pilsner 1 lb. TWF 1.5 lbs. CUJO 2000 - 2017  15 gallons This beer is dedicated to my 3rd dog Cujo who passed way on Feb. 27, 2017. He was 16 1/2 years old. He had diabetes, a heart murmur, half deaf and blind. Still, he fought it until the very end when we had no choice but to say goodbye. A real fighter he was. This is the second brew using my new water profile using Bru'n water. I really should wait until this is kegged to see if it actually works or not. I am confident that it will. Pretty much the same recipe as the first one and most likely the same recipe for all of 2017. Very cheap beer to make compared to what Ontario Craft Brewers charge for their basic Blonde Ales. This will have the same water profile as the last beer. The previous beer had a low BU of around 20. 15 Gallons IF THIS BEER CLEARS, THEN I WILL KNOW THAT MY PH IS IN CHECK This is my first try using water salts in a simple and very light ale. I am doing this to get it to clear as in adjusting my PH using salts and 100% RO water. Here goes nothing. I am also doing this to make better beer. 15 Gallons Phase 3 of my water profile. If this doesn't clear, I am not sure what to do next. 21 lbs. 2 row 2 lbs. Bairds Carastan ( 34 L ) 2 lbs. TWF 85 grams EKG - 5.1% AA - @ 60 min Wyeast 1318 London Ale III - Yeast pitched @ 12:30 pm. 50/50 RO/WELL mash & sparge. O.G - 1.048 - 79% F.G. - % - SRM - 6 BU 25 I brewed this recipe many years ago and it usually turned out okay. Just when I brewed a lower srm beer was when I got into trouble. My alkinitity in my well water is very high - 250 ppm. Hopefully, cutting it with RO water brings it down to an acceptable level where I don't get a harsh carb bite taste after 2 weeks in the keg. Even if I get my alkinitity down, I still need to work on my PH. I don't want to buy a PH meter just to use once, so hit and miss it is. Magnum - 11.80% AA at 60 min. 50 grams Hallertauer - 2.5% AA at 60 min. 50 grams Hallertauer - 2.5% AA at 30 min WLP036 Dusseldorf Alt 50/50 RO/WELL in mash - 9 gallons total water in mash 8 gallons WELL in sparge 4 gallons RO in sparge This is the second stage of trying to make a lighter colour beer that will clear. This water profile worked great for 13 - 16 srm beers, now to try it with 5 - 7 srm beers. I don't want to go lower because I find those lighter beers boring and they will probably not clear. Brew Canada Canadian Draught - Monday, Jan. 23, 2017 - " 1979 "

4 Gallons This takes me back to 1979 when I bought my first house and definitely couldn"t afford to buy beer. Go ahead to 2017 and I still can't afford to buy beer. So, here I am making a kit beer. I have a 3 gallon keg, so I thought I would take this down to 4 gallons with only a lb. of corn sugar. 1 can of Brew Canada Draught - ( no date on can ) 1 lb. corn sugar US-05 50/50 RO/WELL water O.G. - 1.048 F.G. -  1.015 % -      4.37 My pots hold 2 gallons each. In separate pots, boil 2 gallons for 10 minutes and cool it. Dump in wort and top off with boiled and cooled water. Add corn sugar to carboy as it is. I did this years ago with no problems. Add yeast and enjoy your " INMATE " brew in 10 days. I put both pots outside to cool. It may take a few hours but that is okay. I had to bring them back in and add ice to the sink. Didn't take long, but it only got down to 75+ F. Added corn sugar and tossed it outside to cool to pitching temp. Temp is at 64...

BU - 27.8 I hope I got my water profile in range for this style of beer. I don't want to toss any more beer like I did last month. 2 batches, 8 cases of beer down the sink. The lager tasted like cough syrup and the bitter was infected. I used RO with water salts. Never, ever again. I do think I have got this right though. Will see in 14 days. Had a bit of trouble getting a good seal on the conical. No bubbling action from the hose, but when I checked there was a good krausen going on. Adjusted it 3 times and gave up. Give it 2-3 weeks and keg it. ...

4 Gallons This is just trying to brew a kit without adding corn sugar or any more extract. I bought an extract kit from Brewers Pantry last year and the extract twang was just awful. Hopefully, I can add 50% of this beer mashing 2 row and vienna malt. The wort tasted good, no extract twang yet. Trying to get the hops figured out on how much to use. I couldn't get any info from the kit, no surprise there. I assume it was from 12 - 15 bu's. I did taste hops when I took a gravity reading. It is fermenting now @ 66 F. 1.9 kg. - 4.19 lbs. Brew Canada Draught 4 lbs. Not so great Western Malt 8 ozs. Vienna 28.35 grams Hallertauer - 2/5% AA for 60 min. US-05 75/25 RO/WELL in mash 100% RO in the can, boiled 10 min. Tried to get 3 gallons in each of the pots on the stove, but they wouldn't hold that much. With evaporation I got 4 gallons, which isn't too bad I guess. Next time if this turns out I will make a bigger gravity in my mash so I can add some boiled and coo...

WLP036 Dusseldorf Alt - Yeast pitched @ 12:30 pm. 50/50 in mash - 7.20 gallons - 1.25 qts./lb 8 gallons well in sparge 4 gallons RO in sparge O.G. - 1.046 F.G. -  1.016 ( carboy 1 ) % -     4% ( carboy 1 ) SRM - 16 BU - 26.5 I think I am done with Pilsners, Helles style beers etc. for awhile. I am getting nowhere with these styles of beers, and am kind of sick of them. These at least have lots of flavour and mostly I seem to have much better luck brewing darker styles of beers. ESB and bitters are up soon also. Wort tasted good, not cloying at all. Kind of light or bland because of all of the dark malts, and of course using 50/50 water in the mash may be the reason.
