Kegging the previous Helles on March 30 and saving the yeast for today. Kind of sick of brewing and it is really raining out. Cannot keep filling the septic tank on top of the rain to clean yesterday's equipment. Will clean today's stuff tomorrow after I keg my Helles. Set up and get organized. Ingredients 11 lbs. Weyermann Floor Malted Pils Malt - ( should of ordered 13 lbs. ) 80 g Tettnanger at 60 min. 28.35 g at 0 min. Escarpment Labs Biergarten O.G. - 1.046 F.G. -  1.008 % -      5 SRM - 3.1 BU - 25 Everything went so well today that I am getting the feeling I left something out. Still raining outside and still doing social distancing. Sucks. Starting to think I need to buy a sack of grain for May? British Golden Ale - Sunday March 29 2020 - TOSSED OUT

Just brewing something with this US malt I bought from Brewers Pantry. Low alcohol beer for sure. I am looking for a nice, lite medium hopped brew. Well that didn't happen. Ingredients 10 lbs. Proximity Malt 8 ozs. Carastan 34 g EKG at 60 min. Cal Ale yeast from Escarpment Labs O.G. - 1.040 F.G. -  1.007 % -      4.3 SRM - 4.4 BU - 25 Screwed up already. Added my Helles lactic acid to the mash instead of this recipe's amount. Added 2.2 g of baking soda to raise it. Hope it works. Mash seems to be working better since I added a pitcher of sparge water when I doughed in. That had to put it up to around 2 qts/water per lb. of grain. Not sure what that would do. Mill on notch 3 with this malt for the last 30 pounds. Research indicated 2 lbs. water/grain is the limit and that is where I am, so stop worrying about it. Friday, April 9 - Almost done. Day 12. Finally got a sack of malt. Not what I ordered, Proximity Malt from Wisconsin. Only 50 lbs. instead of 55, but getting free delivery makes up for the 5 lb. loss. I picked this up from Bomanville myself. Lots of traffic on the 115 when the PM said to stay home. I can brew 6 brews now, I have a batch of Pils malt to yet to brew. Ingredients 10 lbs. Proximity Malt 1 lb. UCM 7 ozs. Biscuit - ( all I have ) 34 g EKG at 60 min. Nottingham Ale Yeast - ( high performance yeast ) Water Profile - Internet Recipe CA - 91 SO4 - 148 CI - 53 O.G. - 1.038 - 73% F.G. - % - SRM - 4.5 BU - 25 I milled at notch 4. Notch 3 was not enough. When I doughed in it was really thick. If I get a stuck mash I will have to add a litre or 2 of sparge water. Stuck mash today. First time for this. Cavan IPA - Monday, March 23, 2020

This may be my last Trump Ale for awhile as the hop and malt buy are delayed for a month or more because of the covid 19 virus. Mail order grain and hop buys are expensive  to do, but I have no other choice. I only have enough Chinook hops for one batch. Ingredients 11 lbs. 0i0 2 lbs. Vienna 8 ozs. Biscuit 1 oz. Carafa Special III 30 g Chinook at 20 min. 65 g Chinook at 10 min. 56.70 g Chinook at 0 min. 56.70 g Chinook dry hop 3 - 5 days before kegging. US-05 Water Profile - Standard IPA O.G. - 1.047 - 69% F.G. - % - SRM - 7 BU - 34 I will wash the English Ale yeast to see if I can re-use it or just go with US-05. Basically the same yeast. I have decided to wash this yeast as I have noticed some yeast labs are shutting down temporarily until the covid 19 virus is contained. That means stock will quickly be bought up from the HB stores and that will be it. No yeast, no beer.                       ...
