Storey Stout I haven't made a stout in 3 years. I'll bottle condition one keg and serve the other, just in time for Christmas. I made up this recipe. I don't want flaked barley, lactose, oats or any crap like that. I kept it simple. I went with a pound of crystal 90, because that is the only crystal I have on hand. As usual, the Beer Store can go fuck themselves. 14 Gallons 21 lbs. Canada Pilsner Malt 2 lbs. Carafa I 2 lbs. Carafa III 1 lb. I finally bought some EKG pellet hops. I haven't used them in 3 years since the hop shortage. They went from here locally - $55.00 for 5 lbs. to over $200.00 for the same 5 lbs. This is my house ale. This will be brewed until December when I'll finish off with a stout. 22 lbs. Canada malt 3 lbs. Munich malt 1 lb. Carapils malt 1 lb. Crystal malt 90 grams German Hallertauer - 60 min. 50 grams Nottingham O.G. - 1.050 F.G. - 1.010 % - 5.3 BU - 22 SRM - 6 When I kegged it, it very, very hazy. Seemed to have yeast all the way through it. Gelatin will clear it though, it always does.

My Simcoe hops didn't arrive in the post, so I wemt ahead without them. I am using a slurry from my last IPA, so I want to keep it the same. 15 Gallons 22 lbs. Canada 2 row 2 lbs. Munich malt 1 lb. Carapils 1 lb. Home toasted 2 row 3 ozs. Carafa Special III ( for colour only ) 28g Amarillo - 60 min. 28g Centennial - 60 min. 28g Amarillo - 30 min. 28g Centennial - 30 min. 28g Amarillo - 20 min. 28g Centennial - 20 min. 28g Amarillo - 10 min. 28g Centennial - 10 min. 28g Amarillo - 0 min. 28g Centennial - 0 min. 325ml Nottingham slurry O.G. - 1.048 F.G. - 1.012 % - 4.7 SRM - 8.2 BU - 42.8 At first the toasted malt dominated the flavour and I didn't like it. However, given time and it has started to taste pretty good. More balanced than my previous version. This is a good cold weather sippin beer. I think I will retire this recipe.  Yet another version of a CIPA. This is quite malty and I hope I used enough hops to balance it out. The wort tasted pretty good. It was quite dark. I think the crystal 40 made it darker, although Promash didn't reflect that. It has a nice copper hue to it which I think is great. However, this may make it too malty. If so, I'll raise the BU to like 60 to 65 or even to 70 the next time i brew this. As long as it doesn't get too cloying I will get away with all the hop additions. 15 Gallons 27.50 lbs. UCM 2 lbs. Since I am low on beer, I am brewing in some new wine buckets I bought from a wine store for $2.00 each. I have been getting low efficiency, so I adjusted the dial up one notch. It must of somehow clicked down a lower notch, maybe. I have never touched it in 10 years. However, the specialty malts may of been milled too much. I got too much powder, so next time I have to lower the dial one notch for the specialty malts. It seems that the Canada Malt is smaller than the American and German malts. No surprise there. I thought these buckets were air tight. They are not. I added water and turned them upside down and no water leaked out. When fermentation started, there was no activity in the blow off containers. I checked and there was indeed a full layer of krausen on top. The lids even had a grommet in them. They are now buckets for grain, washing equipment etc... 14 Gallons 22 lbs. Canada Malt 2 lbs. Brewing again. It has been awhile. I am back to brewing my house ale which has turned out to be my best beer. I hope to get a few kegs of this brewed before getting into some winter brews. 15 Gallons 22 lbs. Canada Malt 2 lbs. Munich malt 1 lb. Crystal 10L 1 lb. Carapils 80g Hallertauer - 60 min. 50g Nottingham My efficiency has gone from 76% to 63%. When I crush my grains, it seems that the 2 row is just basically falling through the mill. Okay, the settings were changed. Nope, same settings. However, when I grind my specialty malts, I have to really hang on the drill to keep it from spinning in my hand. So, I need to change the settings for the Canada malt only. They are smaller than they were last year. More info on this later. I raised my grain mill up a notch. I got 79% efficiency, so as long as I didn't get too much astrigency. Later... O.G. - 1.040 F.G. - 1.010 % - 4 SRM - 6 BU - 20 EFFICIENCY - 63%

Cavan Cream Ale I haven't brewed a Cream Ale in over 8 years. I think it is about time. I used 25% flaked corn then. Today I used 15% flaked corn. I still have enough for another batch. This is a first using Wyeast 2565 Kolsch yeast. My ferment temp is 60F. Should be clean, but is hard to clear. I have time. The gravity is low to meet the amount of yeast I had on hand and age of the yeast. 14 Gallons 17 lbs. Canada Malt 2-row. 3 lbs. Flaked corn. 60 grams Hallertauer - 60 min. 2 pkgs. Wyeast 2565 Kolsch ( 2 - 2L starters ) O.G. - 1.040 F.G. - 1.014 % - 3.4 BU - 16 SRM - 3 This is a good lawnmower beer for the summer. The slight corn flavour adds a nice touch to it. Now that I have a few cases ahead, time to make some real beer.

Cujo Light Another try on lagers. I am building up lager yeast so I can brew one in my 14.5 gallon conical. Takes a boatload of yeast. This will be split with an ale. 14 Gallons 17 lbs. Canada Malt 2.5 lbs. Flaked Rice 1 lb. Carapils 70 grams Hallertauer - 60 min. WLP800 Pilsner Yeast WLP001 Cal Ale Yeast O.G. - 1.038 F.G. - Ale - 1.008 - Lager - 1.012 % - Ale - 4 - Lager - 3.4 BU - 18.7 SRM - 3 The ale took almost 24 hours to get going. However, nothing from the lager yet. I used a starter and tossed in two extra vials for good measure. The lager took 84 hours to get going. I kegged, cleared and drank the ale before this lager was done fermenting. It will be a long time before I waste my time on making lagers again.

I bought some Wyeast Pilsen yeast 2 months ago and haven't used it. I am 0 for 6 in making lagers. I haven't used lager liquid yeast in almost 10 years. I do remember it was okay though. No diacetyl or sulphur that I clearly got using dry lager yeast. So here goes nothing. This is a split batch with US-05 in the other carboy. 3 Dog Lager 14 Gallons 19 lbs. Canada Malt 1 lb. Carapils 50 grams hallertauer - 60 min. 2 Wyeast 2007 Pilsen Lager US-05 O.G. - 1.040 F.G. - 1.010 (Ale) - 1.014 (lager) % - 4 (Ale) 3.4 (lager) SRM - 3 BU - 14 I kegged the ale since the gravity was at 10 and it really had no intention of clearing. I am letting this age for as long as it takes to clear. The lager is still bubbling away slowly. I didn't make a starter for the lager. Since I used 2 pkgs. I thought it would be okay. It is okay, ( a little sulphur still ), but is going away. It still took 2 days to get going. This says to me that I should of used a starter to get the lag time down. Even tho...

3 Dog Pub Ale 15 Gallons This turned out pretty good, so I am going to brew it again. I am using saved yeast from the last brew, so I may as well use the same recipe. 22 lbs. Canada Malt 1 lb. Weyermann Crystal 10L 80 grams Hallertauer - 60 min. WLP001 Cal Ale slurry O.G. - 1.042 F.G. - 1.010 % - 4.2 SRM - 4.2 BU - 20 Seems to taste a little smoother than the last one. I guess re-using yeast is better. I got 300ml of washed yeast from my 14.5 gallon conical. I think if I opened the lid after draining to my kegs, I will get more yeast. I will have to add 2L of sanitized water and wash the yeast. 300ml seems a little low.

Nottingham yeast O.G. - 1.046 F.G. - 1.009 % - 5 SRM - 12.8 BU - 50 I have been getting a cloying taste with recipes that use a ton of "C" hops. On a whim I decided to mash hop. That seemed to work, at least for this recipe. I kegged one of two carboys early, just to see what it would be like. It has a smooth, firm bitterness to it. No cloying at all. I am not sure if cloying is the word I am looking for. In the past I tasted an over the top bitterness or hop taste that I didn't like. Stewart Line 2011 This is a light brew since I am very low on ingredients. I just got under the wire so to speak. The OG is only 1.036. My efficiency suffered a bit, as I hoped to get to 1.040. 14 Gallons 19 lbs. OiO 2 row 1 lb. Crystal 10 60 grams Hallertauer - 60 min. Wyeast 1099 - carboy #1 100 grams 34/70 dry lager yeast - carboy #2 O.G. - 1.036 F.G. - 1.014 (ale) % - 3.2 (ale) SRM - 4.4 BU - 16 This just used up all of my yeast on hand. The lager wort is taking a long time to cool. I have time. I pitched the 1099 in 64F wort. I didn't rehydrate the 34/70 because the sealed pack was already in 100 gram packets. Since 50% of it dies when just sprinkled on top, well, I am left with 50 grams. It has a big rocky head of krausen on top of the carboy. Absolutely no smell from the fridge or air lock. I assume I will have a big huge mess on the bottom of the carboy when all is done. Things are moving along nicely. I have to remember that this is a 1.036 beer, so that it may be done a ...

3 Dog Harvest Ale This is another version of this Canadian Amber Ale. The previous one is okay, but too thin of a malt taste. I added some biscuit malt to this to see if it will get more of a malt background to it. 15 Gallons 25 lbs. OiO 2-row 1.5 lbs. Munich malt 1.18 lbs. Biscuit malt 50 grams Amarillo - 20 min. 50 grams Centennial - 20 min. 50 grams Amarillo - 10 min. 50 grams Centennial - 10 min. 50 grams Amarillo - 0 min. 50 grams Centennial - 0 min. 34.5 grams rehydrated US-05 O.G. - 1.050 F.G. - 1.010 % - 5 BU - 20 SRM - 6 I didn't see any signs of fermentation until the next morning. Too long of lag time. 18 hours. Now if this was a lager, that would be okay. This isn't the first time I have had a long lag time with this yeast. I'm not worrying though...

3 Dog Harvest Ale I brewed this a month or so ago and that useless yeast from Australia didn't complete it's job. Threw it out. Garbage yeast. I didn't use any crystal malt with this recipe. Kept it simple. 15 Gallons 25 lbs. OiO 2 row pale malt 1.5 lbs. Munich malt 50 grams Amarillo - 20 min. 50 grams Centennial - 20 min. 50 grams Amarillo - 10 min. 50 grams Centennial - 10 min. 50 grams Amarillo - 0 min. 50 grams Centennial - 0 min. 4 sachets of rehydrated Nottingham yeast. O.G. - 1.050 F.G. - 1.010 % - 5.2 BU - 20 SRM - 5 This has a nice, light citrus flavour to it. I didn't want it to be too strong, just a nice CPA. It did, however have a good hop bite to it when I tasted the wort. I like this, but it needs more of a malt background. It is Jan. 25th now. It is unbalanced. Too much of a hop bite vs a malt background. Next time use more Munich malt or ssomething to give it more malt. Maybe mash higher.
