Brewday - August 1, 2009

14 Gallons Max's Pub Ale This is a light, summer brew to use up some older hops. I am still brewing lighter beers at least for a while until fall gets here. I hope to get my new temperature controler wired soon so I can brew more beer. 22 lbs. Canada Malting 2-Row 1 lb. Flaked Barley 8 ozs. Crystal ( 70L ) 71 grams Hallertauer ( 3.6% AA ) 40 grams Mauribrew Ale Yeast ( 514 ) O.G. - 1.044 F.G. - 1.014 % - 4 SRM - 6 BU - 15.5 The fermentation is winding down to a slow, but steady rate. This yeast is much faster than Nottingham. I will let this ferment for 14 days to clear properly. This beer turned out well. Very light and tasty. I should of brewed this last April. This is a good summer brew that goes down great and is all malt. Too bad the big brewers are too cheap to brew a light beer with flavour. This is pretty light. Brewing hoppy ales the last while, this beer is nice, but I don't think I will brew it too often. I want beer with tons of hops in it. Hophead? I guess...

15 Gallons 3 Dog Summer IPA This is a lighter version of a true IPA. I want that citrusy taste, but not too bitter for around the pool if we will ever sit around it. 22 lbs. Canada Malting Pale Ale Malt 1 lb. Flaked Barley 1 lb. Crystal ( 75 L ) 8 ozs. Biscuit Malt 50 grams Galena ( 60 min ) ( 7.1% ) 28 grams Centenial ( 30 min ) ( 8% ) 28 grams Centenial ( 0 min ) ( 8% ) 60 grams Mauribrew Ale yeast ( 20 grams each in 3 carboys ) O.G. - 1.046 F.G. - 1.012 % - 4.5 SRM - 7.4 BU - 27.2 I went with 3 carboys because I am greedy and thought I could squeeze out more beer than usual. It almost worked. I had to add a gallon of RO water to the last one. No big deal. It will be extra light I guess. I am working on to get 3 carboys full of beer with no dilution in the future. Just up the ingredients a bit and keep the boiler filled up to the max. I had a lot of doubts about this yeast. It is a nice, neutral yeast that lets the hops and malt come through totally. 3 Dog Pub Ale 10 Gallons 22 lbs. Canada Malting 1 lb. Crystal ( 70L ) 1 lb. Flaked Barley 8 ozs. Biscuit 70 gms ( 3.6% AA ) Hallertauer ( 60 min ) 23 grams US - O5 yeast O.G. - 1.048 F.G. - 1.012 % - 4.8 srm - 7.4 BU - 14.6 This is a summer pool beer. I only make this once or twice a year for around the pool for company. It is not my favourite style because of lack of hops, but is a good quaffer anyway. This beer is infected by something. It didn't look right two days into fermentation. Slime like shit on the top of the carboy. I knew that something was up. I just don't know what or why? Try again I guess and keep up the sanitation and hope for the best. Summer brewing, I don't like it. Too much humidity, crap in the air etc...
