Brew Day - September 25, 2009

15 Gallons 3 Dog Blonde This is a single malt brew using only Canada Malting 2-row. I want to brew a simple beer to see what it will taste like with no crystal, biscuit or any adjuncts in it. I read on the net that a lot of homebrewers are having great success with this style. I am having issues with quality lately and I bought some new yeast ( Nottingham ). If something is not right, this style of beer will certainly show it because there really is nothing to hide. I am fermenting this at around 14C - 15C. Quite cool for an ale yeast, but within range of the Nottingham yeast according to Danstar. If and when I check the FG after a week or so and it is quite high, I can easily raise the temp. 27.50 lbs. of Canada Malting 2-row 50 grams EKG pellet hops ( 60 min. ) 40 grams Nottingham ( wort was 64F ) O.G. - 1.052 F.G. - 1.010 % - 5.2 SRM - 3.6 BU - 14.4 I didn't use any Gelatin with this brew. 14 Gallons 3 Dog Pub Ale This is my easy drinking pub ale which I have brewed in the past with great success. I am using a different yeast now. I am now using Mauribrew Ale 514. This is a lazy yeast, takes longer to ferment and clear though. I used all the malt I had in the bag this time. 26 lbs. Canada 2-row 1 lb. Bairds Crystal ( 70L ) 1 lb. Flaked Barley 50 grams EKG hops ( 60 min ) 40 grams Mauribrew Ale Yeast - 514 O.G. - 1.053 F.G. - 1.014 % - 5 SRM - 7.8 BU - 15.3

15 Gallons This is a little more hoppy than my last one. I mash hopped this one to get a more gentle hop bitterness out of it. Some, or even a lot of brewers say mash hopping does nothing. Well, I will know more in a couple of weeks. 3 DOG CANADIAN AMBER ALE 22 lbs. Canada Malting 2-row 1 lb. Crystal ( 70L ) 1 lb. corn sugar 1.25 ozs. Flaked Barley 28 grams Chinook hops ( 11.5% AA ) MH 14 grams Chinook hops (11.5% AA ) 60 minutes 14 grams Chinook hops ( 11.5% AA ) 40 minutes 14 grams Chinook hops ( 11.5% AA ) 20 minutes 28 grams Chinook hops ( 11.5% AA ) 1 minute 40 grams Mauribrew Ale yeast O.G. - 1.047 F.G. - 1.012 % - 4.6 SRM - 7 BU - 41.3 This is a tasty brew. I didn't get the hop bitterness I was after though. I just kegged it, so after adding Gelatin for a few days I will carb it up and get a better idea of where I sit with the bitterness.
