This is my pilot brew for an English style ale. I have another English style beer coming and which one I like most will be a regular beer which hopefully be on beer gas sometime. Boddingtons or Fullers? We will see. If this style of beer is okay, I do intend on buying some Pearl malt instead of using 2 row. Taste is far superior.
22 lbs. UCM 2 row
1.56 lbs. Simpsons Crystal 100
1 lb. Carastan
56.70 g Target 7.30% AA @ 60 min.
28.35 g Challenger 7.8% AA @ 30 min.
50 g US-05

BAKING SODA - 1.1 G IN MASH ONLY
GYPSUM - 4.8 G IN MASH
CALCIUM CHLORIDE - 2.3 G IN MASH
GYPSUM - 6.8 G IN SPARGE
CALCIUM CHLORIDE - 3.3 G IN SPARGE
PH - 5.4
O.G. - 1.050
F.G. - 1.010
% - 5.13
SRM - 10
BU - 30.5
Using the Carastan malt that OBK mislabeled kind of screwed up the mash. I then almost tottaly forgot the brewing salts. This is what happens when you put everything off until brew day and try to get it all done.
Yeast pitched at 2 pm.
Fermentation Notes
Very active on day 2 - 3. Slowed down a lot since yesterday. Still bubbling away, but sporadically. Almost done on Friday, Dec. 15. Keg on Dec. 22.

I did the water calculations wrong. I didn't include epsom salts which would not of changed anything that much. I thought it would, but did it right and not a lot of changes. This is the last bitter for awhile. Kings Landing and Storey Steamer for 2018. We need to save money and I am making beer as cheap as I can get away with.
