Brew Canada Canadian Draught - Monday, Jan. 23, 2017 - " 1979 "

4 Gallons

This takes me back to 1979 when I bought my first house and definitely couldn"t afford to buy beer. Go ahead to 2017 and I still can't afford to buy beer. So, here I am making a kit beer. I have a 3 gallon keg, so I thought I would take this down to 4 gallons with only a lb. of corn sugar.

1 can of Brew Canada Draught - ( no date on can )
1 lb. corn sugar
US-05
50/50 RO/WELL water

O.G. - 1.048
F.G. -  1.015
% -      4.37

My pots hold 2 gallons each. In separate pots, boil 2 gallons for 10 minutes and cool it. Dump in wort and top off with boiled and cooled water. Add corn sugar to carboy as it is. I did this years ago with no problems. Add yeast and enjoy your " INMATE " brew in 10 days. I put both pots outside to cool. It may take a few hours but that is okay. I had to bring them back in and add ice to the sink. Didn't take long, but it only got down to 75+ F. Added corn sugar and tossed it outside to cool to pitching temp. Temp is at 64 F to 68 F. Hard to get a steady temperature when it is sitting on the bench. A lot of activity swirling around, but not a thick krausen as of yet on day 2. I fully expect an " extract twang " with this beer, but that is okay. I don't remember a lot of my brewing sessions back in 1979. Just too long ago, I do remember the fermentation temp was high most of the time. With no temp control, summer temps on the temp strip were up towards 80 F!!! Yikes, what did that shit taste like? I don't remember tossing it out though, and never had an infection. Bleach for sanitation and rinsed with tap water.

Shania Twang for sure, but not too bad. Not as bad as I expected. Acceptable beer for not a lot of effort. If I do this again, I will just heat up the can of extract, dump in 5 gallons of RO water. Add 2 lbs. of corn sugar, ( christ!! ) and maybe 8 0zs. of crystal 80. Hops? Not sure, I will have to watch Craig/s video to see how much. This brew is okay, but don't serve to anyone but Frank.

                                               UPDATE

After a week in the keg it is clear. My beer has never done that. The srm is just where I want my beers to be. Shania Twang is minimal, but still there. Needs a good dose of noble hops, but not sure how to do it. Hop tea?
