Kings Landing IPA - Extract - Monday, October 2nd, 2017

Eleven Gallons - Carboys



My first all extract brew in over 20 years. It will be interesting if I get a big hop aroma with no water treatment. This is an experiment for brewing in the winter. I may be able to do a full mash brew next week as the weather seems to be quite warm.

20 lbs. United Canada LME.
40 g Chinook - 12.3% AA @ 60 min.
60 g Chinook - 12.3% AA @ 10 min.
56.70 g Chinook - 12.3% AA @ 0 min.
113.4 g Chinook - 12.3% AA - dry hop ( 56.70 g in each keg )
45 g in each carboy.  US-05 ( Usually 40, but this OG is way higher than expected )

I really don't expect a lot of extract twang using bulk malt extract. I don't remember it from back in the day, but certainly got it from those over priced kits. I smelled twang when I added it to my water in the kettle, but it went away later in the boil. I did not taste it in the gravity sample.

                                         WHY SO HIGH OG?

It seems to me that when I use Promash in the extract recipe I have to actually put in 11.5 gallons FERMENTED rather than total water in the boil kettle. Weird. If I did that, I would of ended up with this OG. Lesson learned. Now it is 16 lbs. of extract for a 1.050 + - beer. Fine.

                                             BREW NOTES

Today is day 12 and it is still bubbling away, but slow. It is cooler in the basement now, but not cold. I may keg one carboy and leave the other one to totally finish. Will take a gravity sample soon to see where an all extract beer ends up. I do need to use more corn sugar in all recipes that include extract as this will help it along.

                                             TASTING NOTES

Shania Twang!!! Big time. I guess I should of not boiled it 60 min. Dry hopping may help and or it still might go away with age, but I will never boil it that long again. I think I may never buy liquid extract again. Mash in the laundry room and boil in the garage. More work but winter is winter.

                                               FINAL TASTINGS

The second keg was astringent. Very astringent. God, the worst ever. No idea why. An extract beer using RO water. Dumped it.
