Storey Steamer - Friday June 23, 2017

11 Gallons

A new style of beer for me. Unfortunately my California yeast was dead on arrival, so I am using my slurry from my lager. I will buy some Wyeast 2112 on a later date if I like this and want to brew an authentic steam beer.

22 lbs. UCM 2 row
1 lb. Carastan
1 lb. Victory
No roast malt as Peterborough doesn't stock it. Still a cow town.
70 g Northern Brewer - 8.5% AA @ 60 min.
77 g Northern Brewer - 8.5% AA @ 15 min.
80 g Northern Brewer - 8.5% AA @ 1 min.
( This puts me at exactly 8 ozs. of NB hops )
Slurry of WLP833 German Bock - 2nd generation pitched on June 24 @ 7:30 am
100% RO water with brewing salts - Yellow Balanced
NB hops are US hops. Lucky to get them as all I can get now and next year is German NB. I do use US hops for aroma hops, so it really doesn't matter.

There is no difference between the yellow balanced water profile and amber balanced. I don't get it.

I had a small boil over when texting for only a second and up and over it went. Some hop loss, but not a lot. I did get, for the first time a real hop bitterness in my hydrometer sample. When that guy said in the homebrew forum to " add more hops ", well this time it worked. 8 ozs.? I haven't used NB hops in like 15 years. They have a kind of grapefruit taste to them, but not too intense.

                                           NOTES

Currently doing a D-rest. Should be able to ramp down in a day or so. Will definitely not ramp down until it is done. Very, very active fermentation for a lager. Must be the 2nd generation yeast. Done. Ramped down to 5 C. Kegged one on July 9 and will keg the other one on July 10.

                                                TASTE ON KEGGING DAY

Nice firm bitterness and aroma of NB hops which taste like C hops. Should be a good beer. Can't taste the Victory malt or even the Carastan malt yet. Maybe later when cleared and carbed.

                                                      SAMPLED TASTINGS

This is a real nice and smooth tasting beer. Seems to me to be an AIPA though. That is not a bad thing, just not what I had expected by looking at the recipe. No matter, this is one of my better beers in the last 8 - 9 years. This will be brewed on a regular basis.
