This is the last of my base malt. Will be away for the bulk grain buy, so I bought some 2 row from UCM. $52.00 a sack - 55 lbs.
21 lbs. Bohemian Pilsner
1 lb. TWF
1.5 lbs. Caramunich III
120 g Hallertauer - 4.3% AA @ 60 min.
7.5 g Magnum - 11.8% AA @ 60 min.
56.70 g Hallertauer - 4.3% AA @ 0 min.
400 ML of Nottingham slurry - 7 days in fridge
RO water treated to a yellow balanced profile
O.G. - 1.058
F.G. - 1.014
% - 5.8
SRM - 6.7
BU - 34.6
BREW NOTES
Started fermentation around 7 pm. Going good but quite the mess in the carboys. Good. Will be done soon, just like the previous two were. Will save this yeast and use it right away in a bitter. Still fermenting on day 9, but very slowly. Will keg on April 28. Hope this one has some flavour compared to the last 2. This has a good, firm bitterness to it which I was really lacking in the previous 2 brews. Now I know where I stand with hops, but still lacking aroma flavour even though I used 4 ozs. at 0 min. I changed the water profile to get more of a hop taste out of it. No idea if it will work. This tasted good on kegging day - ( April 28 ). Added gelatin the next day. Needs more hops @ 60 min. I would say around 50 bu to get a good firm bitterness. May have to use a high alpha hop, but any high alpha hop may do as long as it isn't too citrusy or orangey. Hate that shit. Horizon is a good 60 min. hop. I most likely won't be brewing this recipe again as I want to just brew Bitters and a Pilsner or 2.
