This is my first time trying to clone Dragons Breath Ale from Kingston. Hart Brewing from Carlton, Ontario brewed this beer. They are no longer in business though. In my opinion, this was the best beer in Canada and you will no longer find it except at the Kingston Brew Pub. I bet they don't brew the same beer now.
22 lbs. Canada Malt
2 lbs. Honey Malt
1 lb. Carastan
120 g EKG - 5.1% AA @ 60 min.
56.70 g - Cascade 7% AA dry hop in one keg only.
Wyeast 1335 British Ale II
CA - 50
MG - 9
SODIUM - 4
S04 - 75
CI - 61
3.8 ml of Lactic Acid in mash only
PH - 5.30 ( estimated )
Water Profile - Yellow Balanced
My yeast was 114 days old ( ? ) when I got it from TB. Nice, I have to wait an extra week to make an extra starter of yeast. When I buy yeast, I expect it to be fairly new. If I was in the store and saw the date, I would of put it back or expected a discount.

Sampled on day 17. Still fermenting on day 17? Stop already. I don't like the taste so far as this is supposed to be a very neutral yeast. It has an odd flavour to it. Kind of plastic/medicinal. Now that part might be me. I will keg, add gelatin and wait 3 weeks minimum to decide on if I will use this yeast again. I am not sure about this beer. Infected? It may be, hard to tell. Anyway, it sucks. This is so far away from what I wanted to make, god, this beer recipe is tossed in the swamp until further notice. I am going back to Kolsch and Pilsner beers.
