Melisandre IPA - Extract - Sunday, December 3, 2017 ( 15 Minute IPA )

16 lbs. UCM LME
40 g Chinook @ 15 min.
100 g Chinook @ 10 min.
56.70 g Chinook @ 0 min.
50 g US-05
100% RO waater ( no brewing salts but may of needed some gypsum )

This 15 minute IPA only took me 4 hours to make. Set up and clean up included. No problems so far, easy peasy... Both carboys going great the next morning. 64 F. May have to turn wall heater on.
Wort was low on hop aroma for some reason. I added enough hops, or at least I thought I did. Wait and see. Dry hop only if this extract ( may be stale ) is any good. I did see some pectiles on top of the extract when I opened the pail lid. Also I saw some pieces of grain, ( milled ) too. Where the heck did that come from? Will see in 2 weeks.

                                           FERMENTATION NOTES

Going real good the next few days. No blow off yet but it was kind of lower in the carboys. Very slow on Dec 7. 64 F. Turned heater up to 70 F.

Added dry hops on Sunday, Dec. 10. Keg in 4 - 5 days. I will be surprised the attenuation is high because it finished quickly. Sampled 3 days after dry hopping. Not impressed, but will keg, clear and bottle in PET bottles on Dec. 18. Finally kegged it on Jan. 4. Still has that extract twang, but I think it will go away with time. I tasted vegetal hops because I dry hopped for 2 weeks. I will bottle condition one keg with Beaus bottles and bottle condition the other one in the keg and let it sit at 68 F for awhile to maybe lose the extract twang. May be hard to bottle condition with outside temps at -25 C or even lower. God, bring on summer, I am ready.
