Going back to my roots. I am not having good luck with lagers lately. I am sure it was my washed yeast that wasn't done properly. Done doing that. May use Wyeast this fall and winter along with my DME. Kelscey's in town sell DME for $10.00 for 500 grams. Yikes! Brew Kettle seems to be getting out of retail sales of supplies. UCM sells DME for $2.64 a lb. Now, that is more like it. Will be doing partial extract brews all winter. I will just have to boil it in my garage and it will be easy to cool of course.

My last few brews have had an off flavour along with very low efficiency. Bought some new grains, so I hope to get back to 92%. Not quite there, ( 81% ). I don't care at all, as long as I get it around 4.5 - 5%. The wort tasted like I used to make years ago. Going back to brewing bitters only. Very clear coming out of the kettle. However, I do get a lot of trub the first gallon or so. My hopstopper is old and may have to invest in a new one sometime.
US-05 pitched @ 3 pm @ 70 F. Fridge set @ 66 F. No, it wasn't. I set it at 12 C and it was at 58 F when I went to bed. Duh!! I shut the fridge off and it was 66 F the next morning. Going good but not vigorous. 66 F - 68 F.
This got infected somehow. Tossed it. Dam, I now have no homebrew.
