I went back to Bru'n Water and with my next brew, NO ACID is required for this recipe. All of those salts bring down the PH so much, that I don't need it.

The last one was okay. It did have an off flavour which I re-used my 833 with. Not sure what happened. The only thing I did was use spraymalt to make my starter with. 2 batches with this English DME had an off flavour. I won't be using liquid yeast for awhile as I want to really make a lot of beer to bottle condition all winter. I also want to make various styles of beer since I am going to go 50/50 all grain/LME. I liked it back in the 90's when I bought a pail of LME, so we will see. Bought some cleaning tabs for my carboys too. They don't work that well. Next time buy the oxygen powered tabs. Cost way more though. I will try to buy non-crystal oxi-clean as it is way cheaper than the tabs.
Fermentation Notes
Took over night to get going. US-05 seems to be a slow starter lately. I guess I would get a quicker start but don't want to take the chance of screwing up the yeast.
Kegged on Day 11
Had company coming so I kegged it a day or so early. Cleared up bright in 6 days with no finnings. Wish my Pilsners would do that. This beer definitely had " layers in the keg ". Every glass tasted different. I won't touch the second keg at all, just toss it upstairs in the pub fridge and leave it there. I am doing an all extract beer soon and will be using a similar hop schedule. Not sure how it will taste as I am just using RO water and extract. I changed this recipe a bit. No more carastan and 8 ozs. less of Simpsons 100. When it is gone I think I will go with either Victory or Biscuit malt. All in all, using an IPA water profile for the first time did work. I am glad I finally got a good brewing using salts and RO water. It took me over 7 months with a few brews that just sucked. This was the only one so far that tasted like beer. Brewing this style only turns out doing it all-grain. Not sure what I am going to do with my extract. Hate to toss out 27 lbs. of it.
