Daenerys Targaryen Blonde - November 17, 2017

Conical


This is the 2nd pilot brew using brewing salts. I credit this to www.theelectricbrewery.com from Kal's website of recipes. This is his blonde/lager water profile. I did it 2 years ago with little success. No idea what went wrong. It tasted funny and I didn't do a repeat. Well, I am not giving up. There must be a reason for the funny taste and I know it isn't from Kal's recipe. So that is why I am going to repeat or maybe even tweek this recipe to get it where I want it. Then, just brew and brew.

Ingredients

24 lbs. UCM 2 row
1 lb. Crystal 15
91 grams Hallertauer @ 60 min.
56.70 grams Hallertauer @ 0 min.
50 grams US-05 ( Getting higher FG than usual )
CA - 68
S04 - 70
CI - 69
4.2 g gypsum in mash
5.2 g gypsum in sparge
3.6 g calcium chloride in mash
4.4 g calcium chloride in sparge
50 ml. Phosphoric acid in mash only
Estimated PH - 5.26

O.G. - 1.050
F.G. -  1.008  
% -      5.53
SRM - 4
BU - 20

                                              NOTES

Don't forget to turn fridge to 68 F. Okay, I forgot. 72 F next day. On now. If this tastes too tart, raise the PH to 5.3. I don't think it mean much of a difference, but something to think about if you are tweeking this recipe. Fermented well and still going on day 8. Will keg on day 14 but not before.

Has a bit of a strong hop aroma which I am hoping will fade with gelatin/time. 2 ozs. @ 0 min in 13 gallons of beer doesn't seem that much. Pilot brew #2. Try again without any 0 min hops. Follow Kal's recipe next time. I have just enough hops for a basic, light blonde ale. After that, I will brew my Kings Landing if I have enough yeast. Getting low but should be okay. Will most likely go with liquid yeast for bitters until I brew a lager sometime in the spring.

I now know the reason why this beer sucks. I left out the epsom salts when I hit my numbers in the spreadsheet and this really changed the hop profile. No wonder I am getting a huge hop aroma which made this kind of a dry hop noble taste which threw everything off. I did the same with my Winters Coming too. Pay attention for now on. I am glad I noticed that since I am brewing 2 back to back Blonde Ales soon. It may of course be too late for Winters Coming though. Will sample soon. I am not totally sure about this, but I can't keep this profile especially when the beer sucks.
