I am trying something different with the water salts in this brew. The previous 4 -5 were bland and tasteless and did taste " funny ". No idea why, but the salts were low but supposed to be according to the experts. Well, I guess I am on my own now. I was always low on hop bitterness and especially aroma. I raised the sulphate to 125, so there will be no excuse for lack of taste. Minerally? I hope not.
Ingredients:
22 lbs. UCM 2 row
1 lb. Munich II - ( 9 L )
1 lb. Light Carastan - ( 15 L )
4 ozs. Melanoidin - ( 30 L )
40 g US-05
113 g Hallertauer - 3.8% AA @ 60 min.

S04 - 125
CI - 52
O.G. - 1.050
F.G. - 1.016
% - 4.5
SRM - 4.5
BU - 25
NOTES
I always got lots of hop bitterness and aroma using well water, but it was so astringent that it made it undrinkable. So this may work, or suck, we will see. I ordered Munich malt II instead of I. I don't think the difference will be that much. Seems to be done on Nov. 6. Keg in a week or so. Sample? Perhaps. Kegging this soon.

First thing is that it seems to taste fine, as no odd taste yet. However, I should never of used melanoidin malt. 4 ozs. totally dominated this beer. I should of known it would. This is a pilot brew and everything seems normal. I may lower the sulphate to around 100 and leave everything as it is, My next blonde ale will be light in taste as well as look. I am doing this to start brewing lagers and the odd Pilsner if I can get some Pilsner malt, but that is not a priority. Brew this until late spring when you get busy with stuff and get to where you don't have to think about recipes, just brew them. I will stubstitute the crystal 15 with munich 9 and use WLP833 once or twice and that will be it. Maybe the odd AIPA later on which can be drank quickly after kegging. Tastes salty which I hate. Next one should be much better. On the second keg now. Still don't like it. Not the beer's fault, my idiot recipe. What was I thinking? How can you do a pilot brew with all of this malt, dumb malt too. Melanoidin? Give your head a shake...
