I have been getting a cloying taste with recipes that use a ton of "C" hops. On a whim I decided to mash hop. That seemed to work, at least for this recipe. I kegged one of two carboys early, just to see what it would be like. It has a smooth, firm bitterness to it. No cloying at all. I am not sure if cloying is the word I am looking for. In the past I tasted an over the top bitterness or hop taste that I didn't like. Now, that was with Chinook hops which do give that taste if used in large quantities. This is hopefully the end of my tinkering with this recipe and now I can get on with it and just brew it.
