Mmmm Brains
I Want Your Brains!!!!!

15 Gallons

This is the last of the NotSoGreat Western Malt which has given my beer pernament haze since I bought this first bag way back in April. I added some extra stuff in this ESB to hopefully solve the problem. I am going to be buying 7 bags of grain soon and want this problem solved. I added 5.2 PH buffer and clarity ferm. Here goes nothing. This was the last of the sack and good fucken ridence I say.

23 lbs. NSGWM - ( 92% )
2 lbs. Crystal 75 - ( 8% )
50 g UK Target @ 60 min. 10 AA.
Wyeast 1469 West Yorkshire
50/50 Rocky Ridge Spring/RO water
3 tbsp. of 5.2 PH buffer in mash water only.
Clarity Ferm ( 10 ml ) in the Conical. ( Did not work, chill haze evident, like soup ).
Kegged on Nov. 3.
Very hazey beer as per usual with GWM.

O.G. - 1.050 - 80% Efficiency
F.G. - 1.016 - ( 67% Attenuation )

BU - 29 ( the last of my Target hops )

FTBS

The wort was very clear. On all of my previous beers with pernament haze the wort was cloudy, the fermented beer was cloudy and the end resulted beer was cloudy and had pernament haze which Gelatin did not work to clear it. The taste was funny too. Something was off and I have no idea what. At least this wort tasted great and it was clear. Hope it clears and tastes good. I tossed everything in this beer I could think of to get it to clear and taste just right. I have read not so great reviews about 5.2 PH buffer. I didn't taste any mineral like flavours in the wort at all. In fact it was quite good. Now to wait 2 weeks to see. It sure had a nice copper colour to it. The stone fruit taste dominates this brew, at least at kegging time. This may be another beer with pernament haze to it. It won't surprise me as this was made with that shit malt from the US, GWM. Every brew I made with this malt had pernament haze. This was the last of it and I will never, ever use it again. I added gelatin the next day and it was like soup as usual. It did clear up when it warmed up to room temp. This may clear up with gelatin. 99% did not. No matter as this was a test brew using 5.2 PH buffer + clarity brew. I will continue to use clarity ferm but not the 5.2. I don't have a PH meter, but hoping that RO + Spring water will get me in the range to brew lighter brews. I am confident that when I brew with malt that is NOT GWM I will get back to brewing ESB's and even European ales that are lighter in colour. I had great success last winter before I was forced to use this shit malt from the US. Gelatin did clear this better than I thought it would. I am glad it is clearing, but this NSGWM will not be used again.

                                                                   *UPDATE*

Despite my PH problems with this malt, this beer is clearing well and tastes good. I guess the 5.2 PH buffer worked, despite the bad reviews from just about everyone. I don't think I need it with my future brews that consists of Pilsner, Pearl and Cnd 2 row. I need to get a PH meter to see exactly where I am.
