5 Gallons
This is another Belgian Golden style that I brewed last year. It was really good, even with the low efficiency I got. 60%, but I did have a boil over. I was only boiling 7 gallons in a 15 gallon pot and still had a boil over. Never, ever use two elements in a 7 gallon boil. Too high of heat. Lesson learned.
I am going to mash 6.7 gallons and go from there. With a 90 minute boil, I will need a couple of extra gallons of wort from the mash. I heated up around 7 gallons of sparge water. Of course I won't use it all.
7-8 gallons ( pre-boil )
15 lbs. Bohemian Pilsner malt
2.88 lbs. corn sugar ( 13.9% )
1.88 lbs. Wheat malt
1 lb. Aromatic malt
60 g Tettnang - 60 min.
30 g Spalt Select - 30 min.
WLP530 Abbey Ale - 3 L starter that was cooled and decanted.
100% well water
O.G. - 1.068 - 61% Efficiency
F.G. - 1.020

Yeast pitched @ 64F for 2-3 days and I am letting it get to around 21C until done.

I need to be more realistic with my efficiency in big beers. I may lower the gravity to use less grains in the mash tun which will in turn let me use more water in the first runnings. I will go with a gravity of around 1.075 with a grain ratio of around 1.30 qts/lb. My first addition of water will let me go to the top of the mash tun, stir like crazy and let it sit for 20 min. Even so, if I can get a gravity of least 1.070, I will be happy as this is the alcohol level I will settle with. I have to end with a good FG of around 1.008 or so to dry it out. Patience is needed with the fermenting temps. Not too hot at first and on or around day 4 let it get up to 70F or so to finish.This had a Belgian sour taste to it. Was it the Belgian yeast? Infected starter? It did have funny bubbles on it when I decanted the flask when it was cold. Back to Wyeast Abbey Ale II.
