Cavan Blazers Harvest Ale
I have brewed this beer since 2008. This was a style of beer that was very hard to get around here in Ontario back then. I had a few in the US and bought a six pack of Church Key West Coast Style IPA, which is fantastic. Of course, living in Ontario beer prices are too high so I decided to make my own. I brew this style of beer more than any other. I like my west coast style of beer to be dry. That is why I added corn sugar. It works.
15 Gallons
23.50 lbs. Canada Malt
1.88 lbs. corn sugar
1.44 lbs. Carastan Malt
1 lb. Munich Malt ( 6L )
.56 lbs. Acid Malt
85.05 g horizon hops ( 60 min. )
40 g Amarillo ( 10 min )
50 g Centennial ( 10 min )
40 g Amarillo ( 0 min )
40 g Centennial ( 0 min )
3 Sachets S-04 ( 62F)
6 g Wyeast Yeast Nutrient ( 15 min )
1 unit Whirlfloc ( 7 min )
3 tsp. of gypsum
3 tsp. of calcium chloride
1 tsp. of epsum salt
( all water additions were added to the mash and the boil )
100% RO water
O.G. - 1.060
F.G. - 1.014
% - 6
BU - 60
SRM - 6.5
