Brew Day - Monday, September 10, 2012





I am using carboys this time because I want to use different yeast. I used to use Coopers yeast years ago and thought, "Why not give it a try?" Besides, I have only one vial of Cal Ale yeast.

Cavan Blazers Pub Ale

10 Gallons

18.50 lbs. Canada Malting 2 row
1 lb. Carastan Malt
1 lb. Honey Malt
1 lb. Wheat Malt
70 grams EKG - 60 min.
WLP001 Cal Ale yeast
Coopers ( rehydrated )
70% RO water
30% well water ( water softener turned off day before brew day )
1 1/2 tsp yeast nutrient last 15 min of boil
1 tab whirlfloc last 7 min of boil

O.G. - 1.042
F.G. - 1.014 - Coopers
1.010 - WLP001
Coopers - 3.7%
WLP001 - 4.2%
BU - 20.8
SRM - 5.6

The Coopers finished in around 5-6 days @ a temp of around 68F. The thermowell I used for the first time was installed in the Cal Ale carboy. I kegged the Coopers early and it was okay, but very fruity. I am letting the Cal Ale sit for around 12-13 days and then keg it. On day 9 it was still bubbling, but slowly. Kegged and added Gelatin to both kegs. I can't figure out why the Coopers was so fruity. The WLP001 is clean, but it is expected with that yeast. I used to use Coopers years ago and don't remember it being so fruity. It is still beer and The Beer Store can kiss my ass.
