Marty's Wine - Vitners Craft - Cabernet/Merlot Blend - 6L - 4 Week Kit - November 20, 2025
A blend of Cabernet and Merlot grapes. This one has oak chips that clog up my syphon
hose all the time, very annoying.
Yeast Pitched at 1:15 pm, Nov. 20. Cranked the heat up in the bathroom as the temp strip is
reading 68 F. Won't take long to get there. Nothing yet but I have no temp strip on one of the
pails. Picking one up soon.
Day 14 - Dec. 4 - Check gravity - < .996 or lower. If ready, syphon into a carboy. Add stuff
according to instructions. stabilizing and degassing, then wait 24 hrs.
Day 15 - Clearing
Day 26 - Follow instructions, Filter and bottle soon.
November 29 - Still going but slowly.
December 1 - Looks like it and the other one are pretty well done. No gravity check yet.
That is 12 days since the yeast was pitched. Just about right. May rack in
a day or so after I check the gravity in both wines.
December 14 - Check gravity and transfer to wine carboys if gravity is in range.

Gravity - .993 - Okay to rack into a carboy and add Sulphate/Sorbate and degass.
It is interesting that this wine's FG is way lower than the more
expensive wine kits. I needed enzymes/nutrients to get it down and
even they didn't get as low as these Costco kits. Hmmm...
Dec. 5 - Added Chitosan.
Dec. 16 - Rack wine into a carboy and add 1.5 g of Potassium Metabisulphate.
You can go ahead and filter and bottle it, or leave it for a few days until you are
ready. Try to leave behind as much gunk as you can.
FILTER AND BOTTLE THIS ON JAN. 5.
Better late than ever. I am out of the polishing filters but will use a course filter. Hope he
doesn't get dregs on the bottom of the bottle. Got the usual 24 bottles.
THIS IS VERY GOOD WINE FOR A COSTCO KIT
