I am starting to make lagers soon. Make this just to have, toss it on the bench and start
to make your lager. I am waiting to buy some Pilsner Malt, so this recipe will be brewed
until I run low of Rahr malt.

A normal brew day. The boiling wort does smell funny. Not sure why though. I still think that
the hops were Hallertauer. God, I hope not. I didn't label them and totally forgot what they
were.
FERMENTATION NOTES
Jan. 17
Yeast pitched at 10 AM.
Wort: 68 F.
Jan. 18 - Slight activity but it is early - 6:30 AM. - 66F - ( wall heater sucks )
Jan. 19 - Going good. Still need to install a blow off hose. 68F.
Jan. 20 - Temp rising, turned off heater and opened the door. 70F. - too warm.
Jan. 21 - 60F. 10F drop since yesterday. Installed the heat belt but only for now. 74F.
Jan. 22 - After turning off the heat belt, this AM it is 68F but almost done. Fine. I will
turn on the wall heater later today to finish.
Jan. 23 - Very cold outside and down on the bench. Turned on the heater and closed
the door.
Jan. 25 - 70F. Turned down heater. Think it is done.
ADDED 56 GRAMS OF HALLERTAUER
ON JAN. 25
Will do this even though it is done fermenting. Keg in 3 days. The container of hops that I
think are Cascade may not be but should be. I had them in my beer fridge freezer and have
not brewed a lager since June. I will know in 3 days when I keg this.
I kegged it but there was a ton of green hops in there. Fine, I can get it out when I add
gelatin. I do remember not getting anywhere near 23 litres of wort though.
ADDED GELATIN ON Feb. 4
Better late than never. Once all of our road trips are over, I can figure out what I am going
to brew. We do have dogs for 2 months so I can't just brew beer all the time.
TRANSFER ON FEB. 10
Thursday, 2/12. Carbed up and sampling. Okay beer, I do think it needs more dry hop
hops. Try 85 grams instead of 56.
