Maggie Helles - Tuesday, March 31, 2020

Kegging the previous Helles on March 30 and saving the yeast for today. Kind of sick of brewing and it is really raining out. Cannot keep filling the septic tank on top of the rain to clean yesterday's equipment. Will clean today's stuff tomorrow after I keg my Helles. Set up and get organized.

Everything went so well today that I am getting the feeling I left something out. Still raining outside and still doing social distancing. Sucks. Starting to think I need to buy a sack of grain for May? God, I hope not.

PITCHED SLURRY ON WED APRIL 1

Waited until the next am to hit it with 02 and pitch the slurry. Looks like I got around 300 ml in the jar. It contracts every day. This slurry is 3 days old and I didn't make a starter, just left some beer in, swirled it around and tossed it in a 1 L mason jar.

Next Morning - Going great. No beer fart smell yet.
April 5 - Big smell of sulphur.
April 6 - D rest.
April 15 - 9 C. Keg soon. Will not use this yeast again until I taste this. Not sure how long I can use
this same yeast as I don't rinse it, just add to a mason jar and reuse.
April 17 - Kegged it. Not the Pils malt flavour the last one has. Still a good beer and the yeast smells
fine, so I think I am good to use it again in a few days. The last time.
April 19 - Added gelatin.

                                             SAMPLED A 2 L BOTTLE

Nice beer considering it is only a week old. Usually I would age this but this is all I have got and need to age the Kolsch a bit to see if it will get better or not. Clearing up nicely and quick. Will transfer this to another keg and toss it upstairs if I can stomach the Kolsch. Has a slight taste of either too much hop aroma or a bit of sulphur. Hard to tell at this young stage. Will know more in a few weeks. No time to brew as I am tearing down the flower beds and tossing the hot tub out.
