Cavan IPA - Monday, March 23, 2020
This may be my last Trump Ale for awhile as the hop and malt buy are delayed for a month or more because of the covid 19 virus. Mail order grain and hop buys are expensive to do, but I have no other choice. I only have enough Chinook hops for one batch.
Ingredients
11 lbs. 0i0
2 lbs. Vienna
8 ozs. Biscuit
1 oz. Carafa Special III
30 g Chinook at 20 min.
65 g Chinook at 10 min.
56.70 g Chinook at 0 min.
56.70 g Chinook dry hop 3 - 5 days before kegging.
US-05
Water Profile - Standard IPA
O.G. - 1.047 - 69%

BU - 34
I will wash the English Ale yeast to see if I can re-use it or just go with US-05. Basically the same yeast. I have decided to wash this yeast as I have noticed some yeast labs are shutting down temporarily until the covid 19 virus is contained. That means stock will quickly be bought up from the HB stores and that will be it. No yeast, no beer.
BREW DAY
Spilt some water beside the sump pump, but other than that, no problems.
Pitched US-05 at 1:30 pm. Moved the pail to the bench because it was still 17 C. I have hops to brew lagers and maybe Blonde Ales which I am not fond of. Bought 50 lbs. of Proximity malt which should of been 55 lbs.
Tuesday March 24 - Having trouble with the brew pail. Noticed a crack where the bung goes in.
Changed the lid and it is still not bubbling out. Thick layer of foam on top, but
no blow off bubbles. Where is it going? I smell fermentation. I banged on the lid
real good. If I press down on the lid, bubbles come out, so it is not blocked.
Thursday, March 26 - Started to see bubbles, but very far between. Fine, I will ignore it until 2 weeks
or so and then check the gravity. 68F.
Thursday, April 2 - Dry hopped today. Will keg it tomorrow.
KEGGED APRIL 3
The dry hop taste is out front and center. I like it. I can't taste any Vienna malt, or any of the Biscuit malt. Needs gelatin as soon as possible because it is very hazy. Too soon to make a judgement on this beer yet. So far, it tastes like Bobcaygeon Loon beer. Very close. Lose the Biscuit malt, makes it too cloying.
GELATIN ON APRIL 5
This has turned out to a malt infused mess. The hop aroma from the 2 ozs. dry hop have gone away mostly a week or so later. These are still pilot brews before I get my hops, ( if I ever do ). If they finally say you can get your money back, I will take it. I want to brew Kolsch beers for now on.
