56 grams Cascade in fermenter 3 days before kegging
2 sachets US-05

Lactic Acid in Sparge - .2 ml

O.G. - 1.036 - 63%. ( will try to fix that )
F.G. -  1.008 or even lower
% -    around 3.7% - 4% at the most

Looks quite dark to me. Maybe lose the roast malt or reduce it by an ounce? Nope, not yet. I will
take a good look at it when I check at the finished product. I can't make any more until June anyway. Actually, I like the colour in this beer. Just need to get a higher efficiency. Do not want
a 3.5% beer. I had a good look that the mill. Hard to read the gap settings. I was low on one side and real high on the other. No wonder my efficiency was so low. I will do a small grind on my Maris Otter I have because it was smaller than the Rahr malt. When I set it to Maris Otter, I
will mark it with a magic marker and that will be it.

Brew Day - Pitched @ 11 am
Day 1 - No activity
Day 2 - Nothing in the morning but good activity at bedtime.
Day 3 - Good krausen but gone soon. A good steady bubbling. 66F - 68F.
Day 4 - Toss in the remaining hops that are in your beer room freezer on Monday, May 19.
              Done.
 
                                   KEG ON MAY 22 or 23

You have to filter this before guests arrive or let it sit under gelatin for after they leave.
Letting it sit unless the 2 Kolsch beers suck. I am done with Kolsch and EL yeast.

Since this beer is saved for June 20th, check it for clarity and carb up for 2 days and check it.
Do not over carb as it is a pita to get it lower. Yea, I did add gelatin. Tastes fine. Will transfer
to a keg on June 2nd, carb up and toss it in the Pub fridge for June 20. Kind of dark though.
I guess I added too much roasted malt. Should of added at the most, 1 oz.

Transferred my IPA to another keg on June 3rd. Took a keg of Kolsch upstairs to the Pub
room fridge while this one carbs up.

                                                       2 L POP BOTTLE

After I transferred to another keg, I filled and carbed a 2 L pop bottle. I taste more orange
than grapefruit but it is just where I want it. It is not bitter enough. I will be raising the
IBU to 40 for the next batch.

It has completely lost it's hop aroma. Today is June 12. I should of started drinking it as soon
as I cleared it. When they say, "drink it fresh", they mean just that, drink it fresh.
