Storey Steamer - Friday, April 19, 2019 Conical

12 Gallons

This replaces my Helles as I am brewing Kolsch beers, so that is good enough. I like this style of beer and will brew it as my house lager.

Ingredients

11 lbs. German Pilsner Malt
9.5 ozs. Carahell Malt
6 ozs. Victory Malt
3 ozs. UK Choc Malt - 300 L
30.50 g German NB - 9.9% AA at 60 min.
2 ozs. Ontario Cascade - 5.4% AA at 170 F when chilling
1 oz. Ontario Chinook ( dry hop )
Escarpment Labs Munich Lager

A long day brewing back to back batches. I didn't get a lot of the cascade aroma hop flavour in this beer. Still, the wort was tasty. I hate brewing 2 batches in one day, so I will not do it again. I may wash this yeast, or just use half of it in a future brew. Will brew a Marzen after this as I am pressed for time as May is just around the corner. Will get some San Fran yeast as I can't seem to find any Escarpment Labs equivalent. Hope to brew on the big system in early May sometime.

                                                                  Next Day

Going real good the next am. 60 F. Still set for 52 F. Blow off hose has no water creeping up in the hose from the blow off bucket yet.

                                                                  Day 3

Still going at a steady pace. 52 F now. No sulphur smell yet. The literature for this yeast says it is prevalent so be aware of it. Do not miss your D rest. I smelled sulphur for a day or so and then it was gone, didn't last long.

                                                                 Day 5

Same. No d-rest until it starts to slow down. Most likely tomorrow or the next day for sure.

                                                                 Day 8

Added the Chinook hops from Dennis in London. Not sure of the amount, but close to an ounce.

                                                                KEG IN 5 -6 DAYS

Not sure about the taste a day or so after kegging. I realize once I clear it and transfer to other kegs it will taste better than this. Ontario hops? Jury is still out on them.

Carbed up and clearing well with no gelatin. I am surprised that the Ontario hops did okay. Not a lot of bitterness but an okay hop aroma. Tastes pretty good though. I still like my darker version with lots of malt and way more hop bu and aroma. Out of Victory and carahell malt.

                                                                     Final Tastings

My first keg kicked and the second one is almost gone. This has turned out to be an okay beer now. I should of used gelatin and transferred to other kegs. The unpleasant taste is gone now. I still don't know where it came from or what it is. Malt or hops? I am wondering if I let both kegs age and then carb them up what the taste would of been like. That is why I want to brew way more beer so I can let my beer age properly.
