5 Gallons
Been awhile since I brewed this style of beer. All of those Beaus bottles sitting there empty is not a good thing. I hope to get around 80% efficiency with this batch as in the past I got anywhere between 60 and 74%. Will see how Mr. Robobrew does.
Ingredients
14.80 lbs. UCM
4 lbs. corn sugar
5.70 ozs. Aromatic malt
88 g Saaz - 2.80 % AA at 60 min.
10 g German NB - 9% AA at 60 min.
15 g Saaz - 2.8% AA at 10 min.
1762 Belgian Abbey Ale II - ( pitched @ 1:30 pm )
Bottled with 5.30 ozs. corn sugar ( 2.90 Volumes )
NO STEP MASH TODAY
The grain was too high in the mash and I couldn't recirculate the wort. Infusion mash today. I think the silicone ring that was around the malt pipe screen was stopping it from going to the bottom - hence no room in the malt pipe and no circulation of the mash or step mash period. Will check that next time I brew.

Even with my low efficiency the colour was perfect and absolutely clear. I did get a lot of rope like protein in the carboy, actually a lot of it. It has settled on the bottom and seems to be normal compared from my other beers. Maybe a bit more.
FERMENTATION NOTES
Brew Day
Went downstairs around 11 pm and it was going quite good. Even had krausen going into the blow off pot. 17 C.
Day 2
Thought about raising the temp but decided to leave it at 17 C for a few days. Raise it to 70 F slowly for a week and leave it there until done. Turn on wall heater if needed. Snow may be coming in a few days, like this is May. Global warming? Yea right.
Day 4
Slowed down now but still fine. 68 F. Turned up the heat to get to 70 F. Remember the OG is only
1.070, so it won't ferment as long as if it was higher.
Day 5
Finally at 70 F. Still steady but slow. Will let it sit until done and toss on bench to clear.
Day 6
Almost done, but keeping the heat on until totally done.
Day 7
Turned heat back on.
May 20
Can bottle any day now as it is done. Only been 2 weeks so I can let it clear some more and I will keg it to clear even more and then bottle condition in Beaus bottles. Hope the final gravity is low, but it didn't seem to go on forever though.
Save the yeast in your gallon jug and brew it soon. You bought 3 bags of UCM, so may as well and use all of those Beaus bottles up. Sitting on the fridge for 5 years now.
Next Time
Go with 1.70 qts/water/grain ratio and do a step mash. Watch the sparge level and don't add too much water. I was low with my Maggie Helles, or at least I thought I was and ended up with exactly 5 gallons or wort. Something to think about with this brew and all brews ahead. Should be able to bottle this sometime in late May.
Bottled June 2
Not that great of a taste at bottling time. I did get some yeast/trub in the beer/corn sugar bucket, careless. We will see how it ages though. It is 8% though. I will give this another go in the fall and make sure I can do a step mash. Try to get more efficiency out of it and hope to use less corn sugar as I can really taste it.
