If it smells like cat piss, then it will be a good beer. This is a clone of Stone IPA right from the Stone Brewing web-site. A small change from the crystal malts and base malt. HB stores are now charging an arm and a leg for malt nowadays, thanks to our dollar and those cocksucking Americans who bought out G&P. So fuck em, not buying their malt.  I am using US-05 because I don't have time to make a starter. I had to lower the base malt as I still need my usual amount for my Pils and Kolsch beers.

20 lbs. Bohemian Pilsner
2 lbs. Crystal 40
2 lbs. Munich 6
1 lb. Crystal 90
56.70 g Magnum - ( 12.4% AA ) - 60 min.
56.70 g Ahtanum - ( 6% AA ) - 0 min. ( They smell great by the way )
100% city water

O.G. - 1.051
F.G. - 1.014

I brought everything down to the laundry room. 20 C outside so I jumped the gun on this. The only thing was bees coming down for a visit.

This is a tasty beer. Needs dry hopping but I don't have any hops for it. Now I know that the 100% city water works well with this style of beer. I wonder if it will work with a Pilsner? The colour is spot on. Once it is cleared, it will have a nice copper hue to it,

At first this was good. Needed more late hops or dry hopping but I didn't have any. Now, ( Nov. 8 ) it has a very strong, cloying taste. Not astrigent, or harsh, just a very intense grain taste. I adjusted the recipe with just some C-40 and that is it. If I still get an intense cloying taste, I assume it is my city water I am using. Not sure what to do after that, 50/50 with RO water? Lower or eliminate the crystal malt, lower the munich malt. Dry hopping is a must.
