I hope to repeat this to get the same results as the one I brewed on July 29. Most of the time I don't get the same results. However, I am using my usual yeast, but that beer was made with 940 which made a real nice Helles. I will go back to it if the next few beers are not what I want, yup, blame the yeast.
24 lbs. Bohemian Pils Malt
125 g Tettnanger - 3.2% AA - 60 min.
WLP833 German Bock
75/25/RO/CITY
O.G. - 1.054
F.G. - 1.012
% - 5.4
SRM - 3.3
BU - 22.8
833 Pitched @ 46 F @ 9 am Monday, Oct. 5. Good activity @ 48 hrs. Turned fridge off on day 15. Will let it get to 68 F for a few days. Drop yeast and lager until kegging day. I have a little diacetyl in the sample, so I got the wall heater on high to get it up to 68 f as fast as possible. Gravity is too low - 1.014 for a proper d-rest. I should of done it a few days ago.
TASTE AFTER KEGGING
I used my 2 L pop bottle to carb up to see what it will be like. Nice. Has a real nice Pils malt taste. It is over hopped though. Just a tad too bitter which to me takes away from the Pils malt taste. I only used Pils malt with no munich malt which I will never do again. I definitely have to use Munich malt for now on to give it more flavour which is missing with this beer.
NO DIACETYL REST
I was too late with the d-rest on this beer. I did one, but I noticed no activity in the air lock when it was at 68 F or even getting there from 50 F.
3 WEEKS MINIMUM
This style of beer needs to age before drinking. Very bland after kegging and sampling before it is 3 weeks old. Like day and night. All future beers will be aged at least 4 months. I am going to bottle condition this in the corner of my basement to enjoy next summer. This is a must.
