Chris's Costco-Pino Grigio/Chardonnay - Friday, February 27, 2026 - 2 Kits
Yeast pitched at 10 am and 11 am. I topped it up to 25 L instead of 23. I did it before and I
really liked the wine as it was light and refreshing. No gravity check because I know it will
be around 10% if it gets down to .996 - .998. It is .992.
RACK TO CARBOYS ON FRIDAY MARCH 13
Next Morning - 22C - Heater seems to be always on when I visit them.
Day 2 - 22 F.
Day 3 - Too warm - 75F. Turned down wall heater. Temps will be dropping rapidly
tonight so it may settle on out.
Day 4 - Too cool. 70F. Heat back up. Yikes!! 79F. Heat off.
Day 5 - 22C. For now, having a hard time keeping it at a good temp.
Day 9 - Very close to being done.
Day 14 - .992 to .994. Always hit this exact reading with Costco wine kits. It will be around
8 to 10% which is fine. Taste is everything. I will sample it before racking.
Tastes quite good prior to racking and filtering.
Day 15 - Add Chitosan to carboys and let it sit for 11 days minimum.
Day 26 - March 25 Filter and Bottle Day
Rack to a pail if today is filtering and bottling day. If not, wait until you have time.
TASTE ON MARCH 25
I taste cardboard, or specifically, the filtering pads. I added the stuff to the pads before
filtering. But, I did add 2-3 litres of water more than usual though. So, it may just taste
watered down. Or I am tasting the pino grigio part which I have never liked. I will buy
the Heritage Estates wine kit after Marty's wine is done.
All in all, I don't think I will ferment future wine kits at the 25L level. It tastes too watered
down. Maybe in time it will be okay, but no, not again. Considering I only got 27 bottles instead
of the usual 24. Bottled the last of this on March 29.
I don't think this tastes as watered down as I thought.
