Costco Chardonnay - Friday, May 15, 2020
The other half of the 7 L double bag/box from Costco. This seems to have a different smell than the many times I have made this wine. The wine seems to taste the same after bottling. Will buy again when it is on sale. Should buy some red too.

I added the spring water up to the bottom of the first ring in the pail. I seem to get so much yeast/trub on the bottom that I end up with only around 20 bottles. I don't have wine to top up and adding top up water is not what I want to do. This should get me an alcohol of around 11 - 12%. Usually it is around 13% which I don't really care about how much I get anyway.
FERMENTATION NOTES ( check gravity on May 25 )
May 18 - 72 F. Turn off heat if it starts to rise. It did, 74 F. Heat off.
May 19 - Heat off. Still 72 F.
Day 10 - Monday May 25 - Racked to a carboy. Having trouble with the oak chips plugging up
my syphon hose. May stop using them because this is a real pita.

Day 18 - Too busy to de-gas it. Will do soon though.
Day 25 - Added sachets and degassed.
Day 26 - Added Chitosan. Need filters.

Yea a long day bottling but with the 34 C weather outside I did take my time to get this done.
