Coopers IPA Beer Kit - Friday, May 8, 2020 - Moistly A Beer

Moistly out of beer and sick of buying it. Way too expensive and inconvenient to buy at these pandemic times. This is 2 kits along with DME and corn sugar.

Conical - Need to give it a good clean. I seem to have a ring of something around the top and will boil the valves also. Haven't used this since last September. I noticed some dark deposits around where it starts to get bigger toward the top of the conical. A couple came off, most did not. Not sure what it is. Never noticed it before.

11 gallons

2 Coopers IPA beer kits - ( 3.75 lbs. each )
2 lbs. Amber DME
1.65 lbs. Lite DME
2.2 lbs. Corn sugar
Chinook - ( dry hop ). No idea how much I have.
2 sachets US - 05
Well water that I boiled for 20 minutes in my sparge kettle.

O.G. - 1.049
F.G. -  1.008
% -      5.35
SRM - 13.7
BU - No idea

Took longer to make this than my usual all grain beer. Way too much LME, DME, cans of malt to heat and cool in the sink. But, I did it, I always do. No gravity reading, I forgot and remembered when I sealed the conical. I suspect it will be darker than the srm indicates. Wish I had more Chinook hops to dry hop with. The conical seal was dry and didn't seal tight like it usually did. Had a ton of calcium in my 13 gallon sparge tank that I used to boil my water for 20 min. The chiller was covered in it. Last time I use well water, going with spring next time, if there is a next time.

Next Morning - Bubbling away, but slow so I assume it hasn't been going long. Fine, at least it is
fermenting. Never did taste it. A strong extract smell though.
Day 3 - More active, set temp at 66 F.
Day 4 - Same, steady with little smell.
Day 5 - Same.
Day 6 - Added the Chinook hops to the conical. No idea the amount and don't care. 20 g?
Day 7 - Got up to 72 F or more. It is cold outside now in the middle of May because of global
cooling and Covid 19, so I thought I should shut off the fermentation chamber. Had to
turn it back on for a bit.
Day 8 - Still going but slowing down. Not ready to keg yet.
Day 11 - Still bubbling, every 5 seconds or so. Keg near the end of the week. Will be busy anyway.

KEGGED ON THURSDAY, MAY 21ST, DAY 14

Taste us fine for a kit. Not a lot of extract twang yet, but once it clears I am sure it will be there. However, I don't care as I am sick of buying beer. Again, the Ontario brewers have raised their prices. Makes me want to brew more, but it takes a long time to get supplies. It will be once month tomorrow that I paid for my supplies at TB and so far have received nothing as of yet. Epic fail on his part and some with Canada Post.

                                              UPDATE ON TB ORDER

Finally arrived on May 21. Epic Fail on his part. If you can't ship it out within a day or so, bloody shut down and re-open when you can ship in a timely manner. Don't take my money and ship it 18 days later. I will not order from Toronto Brewing again.

This brew is okay. Not to be served to anyone but Frank.
