I will do the other half when I stop using this pail. I cracked the other lid making beer.
Day 1 - Pitched the yeast
Day 2 - Started normally.
Day 3 - Same, I don't lift the lid, but I can smell it fermenting. 72 F.
Day 4 - 76 F. Turned down heat.
Day 10 - Racked to a carboy. Low level of wine in carboy. I am sure I added enough water at first.
Next one I will add water up to the first ring in the pail. I did get a ton of oak chips that
plugged up the syphon hose. There was more trub in this wine that ever before. The carboy
is more hazy than I have ever seen these kits. It did ferment down to 1.000 which usually
never does at this stage. usually around 1.005 on day 10. Trying to get the temp up to 70 F,
but it seems to want to stay at 70 F. It is cold out, but not that cold. Next time I will leave it
in the bathroom considering the winter temps we are getting in early May.
Day 19 - Racked to my carboy. Still, tons of trub. First time for that, have to work on it. Smells kind
of meaty, but faint. Not a crisp wine smell. Carry on.
Day 20 - Add Chitosan. - Done. Yes, it is clearing, didn't think it would be this fast as it was quite
hazy. The second half of this kit smelled like this one. No idea why. Old? Better be good.
Day 30 - Filter and bottle when clear.

Seems okay wine, but it is different than all of the other Costco wine kits. Maybe it was the year? Like 2020 sucks in every way!! That must be it. It is still wine and better than some of the white wine I buy at the LCBO which costs 4 - 5 times as much.
