Wort on slurry. Haven't done this yet, but am doing it now. Getting a keg ready the day before to keg the next morning. Well, that didn't happen.



Ingredients

11 lbs. Weyermann Pilsner Malt
9 ozs. Munich Malt
76.70 g Saaz - 2.8% AA at 60 min
WLP810 San Fran Lager Slurry ( wort on slurry )
Water Profile - My Helles/Kolsch

CI - 70
PH - 5.31

O.G. - 1.050
F.G. -  1.010
% -      5.2
SRM - 3.4
BU - 25

Going with just a 60 min addition of Saaz today. My history using Saaz is not that great. I just can't seem to get a lot of bu/aroma out of them. Now I don't care as this is the last of my stock and will go with Hallertauer for now on. That will be in July.

                                                                     NOTES

Forgot the salts in the mash for 10 min. Kegging beer at the same time is not what I am good at. Still, I think it will be alright since it is recirculating for 90 min. Next time do not leave your milling to the night before and always get your salts ready the day before. Will see in 17 days how this will turn out. Wort tasted pretty good.

                                                              YEAST PITCHED @ 11:15 AM.

Brew Day - Activity in 3 - 4 hours. Very hazy looking with all of the trub from the former beer.
Day 2 -Same.
Day 3 - Same, active. Blow off pitcher looks like milk, odd. Smells fine though.
Day 5 - Still active. In the sulphur stage, need to change the blow off hose.
Day 15 - Very slow to clear. Will take time under gelatin to clear in the keg. Fine.
Day 21 - Friday, June 21 - Keg it.
Day 22 - Add gelatin to cold keg and wait until clear which may take awhile, or maybe not. I hope
               the 10 min delay of adding the salts didn't screw it up. Toss the yeast anyway as I am
               using Kolsch yeast now.

Tastes great. I got a normal clearing out of this and the haze did drop which is good. I am going to CPBF this in my bottles I haven't used yet. Need C02 though. You need this in bottles for the Donwood reunion and a few to take to the Jays game in Detroit. Add gelatin on Tues June 25. Anxious to see what this tastes like as I changed the recipe to reflect a less malty taste with more hop bitterness. Trying to get a balance I guess. Mr. Robobrew does bring out the malt way more than my bigger system. However, I don't want to keep changing my recipes so I will go with this one no matter what system I am using. Now my Cavan Uncommon is a different animal altogether.

Checked to see how the gelatin was doing in the keg. No much, still very hazy. Taste was kind of bland. No much of anything yet. Yes, when the gelatin is still in suspension, it does mask the taste a lot. Give it a couple more days and sample again. Having tap issues. It is leaking again, all over the floor. Big smell and of course if you don't get it all, mold.....

Finally some normal head on this beer. Tastes better, clearing a little bit, not enough to get excited about though. Kind of sick of the style though. Will finish my Kolsch style beers and if I have enough beer ahead will start to brew my 4 Dog Marzens.

Should be gone soon. Okay beer, not crisp enough for me. I won't go wort on trub again, but I will use yeast over again, but wash it with left over beer and decant the trub. I should be able to use it the next day if I want.
