Storey Steamer - Monday, Sept. 10, 2018
Happy Birthday Old Man, do not screw up today. I did not screw up, the RoboBrew did. Temp probe failed. Mashed but boiled in my old kettle. I got beer, but maybe not 5 gallons.
This is an APA Session beer. Low gravity, high hop rate.
Ingredients for 23 L
11 lbs. Bohemian Pils
1 lb. Carahell
15 g Chinook - 12.30% AA at 60 min.
65 g Chinook - 12.30% AA at 10 min.
56.70 g Chinook - 12.30% AA at 0 min.
These hops were bought on Oct. 2017. No idea how old they are.
Nottingham ( Will switch to another yeast soon )

FERMENTATION NOTES
Next day - Going good the next morning. Good krausen in the afternoon.
Day 2 - Krausen lower but still active and steady.
Day 5 - Had a quick sample because of my unpleasant tastes lately. Seemed okay,
lots of chinook taste, lighter of course. No unpleasant taste yet, but that
doesn't come along until after you keg it.
Day 7 - Done, but the odd burp. Getting darker. Better not get that unpleasant
taste as I will have absolutely no idea what I am doing wrong. Keg next
Sunday. Add an air lock and clean up the thermowell for Sept. 19 brew.
Sampled on Sept. 17. No unpleasant taste. Dank though, but it is still
early in the primary. Will use the exact same recipe for the next one.
KEGGED SEPT 23
Good head, but I used no fermcap at all. Carbed up a 2 L bottle for a taste. Hazy and yeasty of course. No off flavours. That unpleasant taste is not here. Why? The last 4 brews had it and this one doesn't. I wish I knew so I could avoid it in the future. Good bitterness, but definitely needs some C- 40 or similar malt. We will see when I use some Breiss C-40 in the future. Most likely in late October, depending on when I need more yeast. Not bad for a beer that hasn't aged at all. Once it is clear and given a chance to mellow out, this will be a good light ale, but with hops.

The boiled RO water was hazy. not sure why though. Well water? Yes, but that is just air. Of course the cool may of just cleaned itself. Will know in a few days when I sample it. This again had an odd taste. The RO water from Camilles was hazy and had a smell to it. I am now going to Rocky Ridge. I can't believe I used Nottingham yeast again. How many times does this yeast let me down? Answer? As long as an idiot like me keeps buying it.
