M & M Pilsner - Saturday, Sept. 29, 2018
I was going to use the conical, but I am not sure about the yeast. Not a lot of bubbles in the starter and when they were there, they went away quickly. It was 2 months old when I bought it, yes I am sick of that. May try some Escarpment yeast in the fall.
Ingredients
13.00. Bohemian Pils
56.70 g Hallertauer - 3.6 % AA at 60 min.
28.35 g Hallertauer - 3.6% AA at 0 min.
WLP833 Bock Lager
Water Profile - Yellow Dry
Doing a lot of reading and this water profile is not good for a Pilsner. If it tastes good, I will be shocked. The CA is too high with lager yeast. Should be in the low 20's. Too much sulphates too.
CA - 51 - ( should be around 20 - 25 )
MG - 10
S04 - 105 - ( way too high, lower to 30 next time )
CI - 44 - ( again too high, 38 - 40 but I was close )
PH - 5.3
O.G. - 1.048
F.G. -
% -
SRM - 3.4
BU - 23.6
Mash - 5.5 gallons - 1.76 qts/lb - Worked fine, any where around 1.7
FERMENTATION NOTES
Next day - Nothing until the afternoon. Started quicker than my ale.
Sept. 30 - Going quite strong for a lager.
Oct 1 - Same
Oct 2 - Same. I smell a real strong aroma of suphur and will soon smell rotten
eggs. Getting ready for a D rest on Oct 5 or 6.
Oct 7 - Almost done the D rest. Sample was nice, but needs more hops.
Oct 10 - Ramping down now. Added air lock because the keezer stinks. Keg in
a week or two, whenever I really need the keezer. I need to clear this as
soon as I can and let the gelatin do its thing for as long as it takes.
Oct 11 - Hope to get it down to 2 - 3 C by the time I keg my blonde ale. May not
get there so I have to use the fridge.
Oct 14 - Think I will leave it at around 11 C.
Oct. 22 - Kegged and saved the yeast but will see if this is okay beer before
using it. Did not save the yeast. I decided not to re-use yeast from a
beer that didn't turn out. I wondered about the yeast when I made a
starter. No foam and few bubbles, like it was dead or dying. My
current 833 starter however, is working great. Tons of foam and
bubbles. This beer sucks too. Tastes mineral like.
FINAL TASTING NOTES
Very clean and clear beer. No flavour at all, no hop aroma at all. I knew this was a failure or not what I wanted after I brewed it. I added an oz. of hops at 0 minute, but they did not come through at all. Must of been my water profile. Lesson learned and I may brew a Bohemian Pilsner on Dec 25/26th. Have not decided yet, depends on my inventory of hops. However, if I can brew a clean beer like this with no off flavours, I will go with this style. Yes, mineral like at first, but with some aging it certainly mellows out.
