M & M Blonde Ale - Saturday, Sept. 29, 2018
Similar recipe as the last one with US-05 and a lb. of Carahell to use up all of it. This is basically a double brew day but the same volume if I used my old system once. Easier on the back. If it is cool out, I may do this in the laundry room if I can clean it first.
Ingredients
12.50 lbs. Bohemian Pils
1 lb. Carahell
56.70 g Hallertauer - 3.6% AA at 60 min.
28.35 g Hallertauer - 3.6% AA at 20 min.
US-05
Water Profile - Yellow Dry
CA - 51
MG - 10
S04 - 105
CI - 44
PH - 5.3
O.G. - 1.051
F.G. -

SRM - 4.5
BU - 27.5
Mash - 6 gallons - 1.78 qts/lb - Worked fine, but had to turn down the pump during the mash. Any where around 1.70 qts/lb is okay I have found.
FERMENTATION NOTES
Next day - Nothing until supper time. Weird.
Sunday - Going good.
Monday - Same.
Oct 2 - Same. Stay the course for as long as it takes. I assume I will be kegging
it past 14 days since US-05 is slower than Notty. Will sample it though,
as I have to know how it is so I can brew it again with no changes. That
dreaded umpleasant malt taste better not show up since I have no idea
what it is and how to avoid it.
Oct. 7 - Almost done. Will keg on Oct 12 or 13 to clear it and go up to the
cottage on Oct 20 if it is okay and doesn't taste funny.
Oct. 8 - Still going, but very slow. Should be able to keg it on Friday.
Oct 10 - Done. Hope it tastes better than when I sampled it. Keg in 2 days.
Oct 12 - Kegging day. Better be good, but I know not as good as my Pilsner.
Going to brew one more Blonde Ale then just brew Pilsners which seem
to taste much better than a plain Blonde Ale. Although, using liquid
yeast will make this a much better beer. May have a mineral taste which
means the sulfate level is too high. ( 105 ppm ) is what I used. Works
with the yellow dry in bruin water. Only for AIPA"s? I will never
know because I am done with them. Brewing a Porter and then all Pils.
FINAL UPDATE
This is the funny tasting beer. It tastes like I dry hopped with a ton of noble hops. Water profile all wrong of course. Use yellow full for now on.
